  • Idli : Par boiled rice ( Idli Rice )- 3 Cups , Raw rice -1 cup , sago - 2 Tbl. Sps. Fenugreek seeds -1 tsp, salt, Black gram dhal -1 Cup, water to soak and grind dhal -3 cups .

    Jeya TVla many years back neenga sonna tipdhan innivaraikum follow panren mam.
    Ulundhu evlo cup, adhula 3 times water add senju fulla use pananum araikka.
    Apdiye romba perumaiya irukum ulundhu busu busunu varumbodhu.
    Morning 1st thing ROMBA aavaloda open senju parpen.
    Nalla maavu pongirukum, adhai parthu en manasum magizhchiyil pongum.
    Unga tip partha pinbudhan idli idlya vandhadhu, hahaaaaa!
    Each time (till date) I thank you while soaking, grinding and making idlis.

    Hi mallika aunty..can u say the tip for quick fermentation for cold country people.. where I live temp goes - 30c so hard to make idly from october to april

      Wash the grinder with hot water and mix with batter. Use one woolen blanket to cover the sides to keep it warm. It will help to raise the batter . Keep for 24 hours

      No measurements for rice. Each variety of rice may hold water to a different proportion.You have to see and accordingly.

    Mam. Thank you for the valuable info. I have a doubt. Can you please share the amount of water required to grind rice. Overall water used will matter right for the right consistency. Also, any tips to keep in mind if mixie is used instead of grinder .... Cold weather fermention tips please

      Ration rice you can use for dosa.For idli, colour may not be white.Any combination of regular rice will do.

      Take enough quantity in a vessel and mix very little Rawa just before pouring dosa. You will get crispy Dosa

      You can grind.Soak urad and keep in refrigerator. Grind when it is cold in a mixie.Generally while grinding in a mixie batter gets heated.It can be avoided by keeping soaked dhal in refrigerator

      Karuppia ulundha innamum nangu nursikkum. Don’t soak it. Just wash and grind. Add Fenugreek with rice while soaking. Enough water while Grinding is very important

      Keep it inside oven overnight..if its too cold place switch on oven for 2 mins at 150 deg F, switch off the oven & then keep the batter overnight
