    In this episode of The Politics of Food, Ben Ferguson investigates the UK’s growing illegal trade in "smokies,” a West African delicacy that has been outlawed in Europe since 1987. Journeying through an underground economy that operates between rural Welsh farmers and urban African communities, he uncovers how black market traders are risking prison to buy and sell blowtorched sheep carcasses.
    Ben also meets the sheep farmers and families who are fighting to change the law, as well as the scientists who warn that smokies can kill. At the center of this whole debate is Carmello Gale, a black market gang boss-or a food freedom fighter, depending on who you talk to.
    On the face of it, this trade is a remarkable clash of traditions, and one that paints an accurate picture of modern Britain. As the smokie trail winds its way through rural livestock markets to the homes of African expats, we see how the politics of food is shaping our laws and-as some believe-criminalizing certain cultures.

    You don't need to keep the guts in a animal to get smoky flavor in your meat. And again, you will have to forgive me, I don't see how a blowtorch fed by propane gives a better flavor than a good hardwood or cherry/apple smoke (or even charcoal for that matter) in a proper smoker.

      @ATL 1 I've been smoking meats for decades, and using gas and leaving the guts inside the animal equals amateur shit. This is just lazy African cooking. Real smoking takes wood or at the very least charcoal. Exactly where is the flavor coming from? The gas? The shit in the intestines of the animal? Sorry, I'll stick to apple, cherry, hickory, alder, mesquite etc. wood to smoke my meat.

      Logically the smokey flavor would be produced by burning and smoking off both the hair layer and top skion layer. What the consumers refer to and recognize as a "smokey flavor" is simply the remaining sent and taste of burned off hair and top skin. I never ate it but we have all smelled burned hair, so logically this is the "enhancer". We can argue all we want that a burned hair smokey flavor is not nice, but that is not up to us to determine. Personally i would wood smoke it, but that would not give the same smoke flavor as these smokies would have.
      Having that said, i do not fully understand what the issue is in Europe? Is it the inside that is left while cooking and then removed? Cause that is just an operation procedure instead of a taste issue. Just remove the insides like regulated and then facking smoke it! Problem solved i would assume?

    Why do they keep the internal organs inside, there is literally shit inside the sheep getting heated up while they torch it. Torch it after you remove internal organs and it becomes just as safe as any other meat. ITS THAT SIMPLE; whats the point of this video.

      But to reply to what you said about them crapping out that bacteria instead they would probably die, remember these people aren;t in a third world country anymore they are in europe, Any resistances they built up to these things would be long gone.
      You have to understand why the government banned this, its just not safe. And if you sell someone something edible and it kills someone thats on the seller and opens them to lawsuits.

    This isn't really honest.
    1. It is a requirement in a "smokey" that you have to cook it with the the spine and skin intact which eating nerve cells can result in eating BSE(or mad cow). Cooking it won't do a whole lot.
    2. Cooking something with the organs intact is pretty dangerous. He is only creating optimal conditions in this video. Do you really believe your butcher is gonna throw out the corpse if he knicks the stomach?
    3. You are selling cooked meat with salmonella on it. You can't expect everyone will re-cook. Cooked food is generally considered a finished product by the government
    African countries have an absurd mortality and disease rates. Don't be so quick to adapt their standards. Western countries use to do things like this but we don't anymore for a reason

      I know jack shit about cars. My grandmother was driving a Honda civic of some sort. It was a hatchback. When my friend who's a car guy saw it he had this same reaction. They settled on a price and he bought it. I wanna say it was Honda civic Type R? All I know it was a sought after type. He took out the stock engine and put some crazy engine in it. ( i wanna say it was a Ferrari engine?) The phrase " full Bolt -on " comes to mind . it was a fast car everything said and done. My gram drove with him when it was finished and she had a ball.

      That's not the issue.
      The reason it's banned is due to the numerous diseases that come from the animal not being skinned and the nervous system remaining intact. They can't modernise it because if they did it would be a completely different meat product.
      Also selling this to the masses, most of whom aren't aware of the risks associated with meat production, would be like selling cigarettes to children.

In fact smoking it the way the meat is prepared with all the organs on the inside would encourage rapid bacterial growth. Charring the skin with the blowtorch does not because the heat does not spread past the top layer of the meat.

    The big issue here is the possibility of "prion" diseases like TSE. Although the form of this which occurs in sheep (scrapie) does not appear to be transmissible to humans, instances of BSE or "mad cow" may be a warning to avoid this kind of possible risk.

    So many seem to have missed the point here (but few have been to an abattoir and seen how it works), the guts have very little to do with it, essentially that part of the process doesn't change. The issue lies within the wool and outer skin, a haven for bacteria. During the slaughtering process this can't come into contact with the meat for fear of contamination. Pigs are de-haired and scolded using hot water and paddles with the guts still inside. Once the guts are removed the carcass is fit for consumption. With lambs and ewes there's no way to properly ensure the skin is completely safe without taking it off and often sheep will leave the farm with lesions and sores. I'd certainly eat smokies but would want to see the condition of the animal first.

      Because the animal is not gutted, torching the animal kills the bacteria on the skin but a lot of bacteria still remain in the gut of the animal, particularly in the intestine. Removing the guts would greatly reduce the risk of contamination but the EU still wants this practice banned as part of imposing wide blanket laws on its members.

    it seems like the government and health officials are more interested in turning migrants into a more "westernized" culture... disregarding the fact that regulation and safe health standards on smokies would
    1- smother out illegal production
    2- open up a market for the meat that goes to waste
    3- open up cultural heritage to others, adding diversification. (the best of all worlds)

Then you can dry age it or not.. and instead of a blowtorch (how is that "traditional" African cooking? I guess maybe they used hot coals in the old days..) you can use a... wait for it... smoker! Impart the smokey flavor naturally and cook the meat tender all in one step.

    very interesting. i just can't however understand the issue with being "too safe" and "too hygienic". There's a reason why there's an epidemic in Africa. Standards in food sanitation is also a reason why other countries develop further and faster than other nations. Those people willingly chose to become migrants in the UK, I would hope that there should be a certain amount of adaptability. These people ever hear of a smoke house? Or a normal grill, just cover the top? You take normal lamb, put it in a smoker.. for a few hours, you dont even need to boil it. It would be tender already.

    We do this in the US as well. When you are dry curing a deer you burn the outside of it, but you remove the innards first. Then you pack it with salt and brine injections.
