Sorry to say that Kashmiri Saffron prices have been slashed by Online selling platforms like Amazon. Amazon is selling 1kg kashmiri Saffron at Rs 21780/ 100gm which means 1kg kashmiri Saffron will cost only Rs 217780 which is approximately 2.17 Lakh and not 5 Lakh. So making profit is impossible in this scenario. ☹

Now come to nutrition quality if there's any deficiency of mineral or nutrition then plant will not flower & fruit, So more or less it have same nutrition as normal land farming.

Innovative Idea but it's required technical maintenance, which is costly for farmers...Those who know technical knowledge and having patience then they can go for this..
Plant does need dormancy because the bulbs need to replenish the energy they spent on the bloom. After harvesting of flowers, the leaves continue to provide nutrition to bulbs and the bulbs begin to multiply (small bulbs begin to grow on the main bulb itself, which can then be separated). He has explained this starting from @10:15. The small bulbs may take more than a year to start blooming.
Land is better if you have access to free water, this method is good but the profit is not high , it takes minimum 3 months for yield+ extra care and caution to maintain conditions, after break even you will get profit but again you need to know how many trays in one container and how many buds per tray or approximate weight of yield per tray.
CO2 , AC and humidifier to be maintained throughout the year, what is the cost of maintenance ? And cost of seeds not given. Need to maintain carefully
This is not to be called as hydrophonic, but it is Aerophonic tecnique. By the way have you done room insulation, otherwise it sucks heat during summer especialy....

Veggies, yes; fruits -- they require more space to grow (at least 1.5m height) and hydroponics not really applicable for their roots
