Rotating rack oven with rear burner is a convection oven with forced air circulation. It is suitable for baking of different kinds of bread and pastry products of small or medium size.
The balanced inflow of hot air, combined with the slow rotation of the rack and a controlled steam input, grants constant and even baking, enhancing the rising and fragrance of the product. Perfectly stable baking grants to obtain voluminous and soft bread.
Made in stainless steel with a modular system in which all the parties, of reduced dimensions and easy handling, are fixed with bolts. System that guarantees duration and longevity against the structural expansion that occurs during the operation. Heat exchanger in heat resistant stainless steel AISI 310 and steel pipes in order to increase the surface of thermical exchange. The combustion of 4 turns increases the yield.
The powerful steam device, inside the baking chamber, operates through a programmable timed system, provides the adequate quantity of steam for even the most demanding applications. The oven can work with gas or diesel burners, as well as electric energy.
It is available in two versions: with mechanical or digital programmable panel. Power three-phase + neutral 230v or of 400v, with a frequency of 50 or 60 Hz. Special on request. The machine compiles with the European directives applicable.
The guarantee is 2 years for all the parties, excluding those subject to normal wear and tear.
