Someone suggested Keale Settle in a previous video and since then, I really can’t un-hear it! It is 100% her!!!!

I am convinced this is Keala Settle, but I feel the name Brenda Edwards deserve to be put forward as a backup because those two have very similar voices and tones. An almost British twang comes out in every 'countdown' which can lead to Brenda.

Easily the best performance of the night. Especially on a night that instead of being inventive with song choices I felt like we got way too many gimmicks.

Voice sounds like Kelly Clarkson to me.
Also, regarding to some of the clues:
1) "A moment like this" - That was the winning song to the first season of American Idol.
2) Constant references to cooking - She has her own chat show, and you can find numerous online video clips of her cooking with well known chefs.
3) Rent overdue AUD $1000 - In a divorce settlement with her ex-husband, he has to pay back money for overcharging her, when he was her manager. He also has to pay her rent to live on her ranch. I'm guessing the AUD reference is because she is big in Australia, having had several top 10 hits over there.
4) Hairdresser scissors on table - She has her own hairstylist, who has featured on her show.
