  • Medhu Vadai (Ulundhu Vadai) is one of the popular snack in South India made using Urad Dhal (Ulundhu). We also make this as a god offering (neivedhyam) for most of the festivals. In this recipe I didn't add onions in the Vada as I made it for neivedhyam.

    Hello maam,I don't have wet grinder can I use mixie ,if yes then what steps should I follow to grind urad dal. Plz reply. Thanks in advance.

      As I said in tips section, we can use regular mixer grinder to prepare the batter but in mixer jar the batter eventhough smooth, the vada will become harder. so once the batter is ready, use a whisk or ladle to beat the batter for 5 mins. Beating the batter helps to aerate the batter making it lighter and fluffy. Rest are the same process.

    Usually even if gring tight enough, once I add salt the dough becomes slightly runny. How to avoid this? Can I grind with salt added in the grinder itself?

      I personally feel adding salt while grinding is making the batter even more runny.

    How long we need to grind...duration?

      Mostly we need to grind atleast for 15 mins. Depends on your wet grinder. The batter should be smooth and the same time, it should be light and should float in water.

      I even soak overnight. It has never absorbed more oil. Only if the batter stays out for long time it tends to absorb more oil and also if we grind the batter for long time then also it will absorb more oil.

    Thanks for your guidance. Please clarify whether onion is to be fried before adding it to the batter or is it to be raw onions with the batter.

      Onion and garlic were not used in this recipe. Ginger and green chillies were added while grinding ,and after the batter was prepared, chopped curry leaves and coriander leaves was added, not to forget salt for taste.😊

      @sridharan raw onion. Please add just before frying. Onion tends to give out its water , cannot be in dough too long. Some people salt chopped onions and let it sit , then strain water and add as well

      No need to fry, just add chopped onions to the vada batter.

    Is there any particular brand of urad dal you recommend in US ? Like swad , Laxmi ?
    I feel my urad dal batter doesn’t turn white . It’s still a little yellowish.
