Puff Paste (American Cookery, Amelia Simmons, 1796, Hartford, Connecticut) 2 1/2 cups of flour 1 cup of cold, salted butter. Cut into cubes 2 large eggs, whisked Combine your flour and butter using either a pastry cutter or a knife and fork. Work the butter into the flour until small, pea size beads of butter are spread throughout the flour. Add in the whisked eggs. Work into a dough with your hands. Cut into 2 halves and roll each half out onto a well floured surface. This recipe is enough to make a top and bottom crust. * Most puff paste recipes from the 18th and early 19th centuries are not comparable to a modern puff paste, but are rather like a regular pie crust. To Make a Cherry Pie (The New-England cookery, 1808, Lucy Emerson, Montpelier, Vermont) 2 cups of de-pitted cherries 0.5 cups of red currants (consider switching this up with cranberries!) 0.5 cups of sugar, divided in half A top and bottom pie paste Lay a pie paste on the bottom of a pie pan. Throw sugar over your bottom crust. Lay over it your cherries and currants mixed up well. Throw over it the remaining half of your sugar. Put on a top crust. Bake in a 350 degree oven for approximately 40 minutes, or until the crust is firm and cooked. Allow the pie to settle for at least 20 minutes before serving.
I need to try the pie dough recipes with eggs in them; every time I have tried to make pie dough that just calls for flour, butter/lard, and cold water, the dough is either too crumbly and never holds together, or it's too wet and sticky, and has a tough texture. Your dough looked perfect!
Very nice! I remember as a kid my dad and I would pick cherries off my aunt's tree and he would make pies and cobbler. I'm about to make a pumpkin pie. I hope it turns out good!
We hope you are feeling better! Verry interesting to hear the recipe of the 2 cherry pies! Happy Hollow s Even! David and Rebecca Like the Hoween Decor!
Reading the receipt and seeing the second pie crust part with the fourteen pounds of flour made me more scared that old Anacronistic Annie waving in the corner lol
For some reason, I was skeptical that it wouldn’t be soup, but I can see that it was not. It looked really tasty! I will have to try that method for my next cherry pie. Thank you for sharing that receipt.
This was a great episode. I love your dress and apron, so autumnal. The pie looked really yummy, do you think the dried currants were put in to absorb extra juice? The look on your face when you noticed the arm moving was priceless… loved the flowers on the mantle as well…
That pie is perfect and pretty! We are having such beautiful fall days here in ohio. Happy 🎃 Halloween Justine. 🥧 Ron's gonna eat that whole pie glad you got yours first 😊
I've never had cherries preserved in Brandy. However, I have had cherries preserved in moonshine. 😉 I wouldn't advise getting Moonshine Cherries too close to the fire if you know what I mean.
That cherry pie reminds me of the ones grandma used to make for grandpa and I years ago. One of my favorites and her cherry cobbler was even better. Ron's looking mighty peeked Justine. Feed that boy! 🍒💀🎃
Girl I am so upset we went to kimswick last sat went to st.geneveve and most places were closed lots of tractors stores open went to the pewter place it is expensive! My husband pushed a tractor it stalled on the man! We were leaving at 4 and saw you and Ron walking up market st. And we couldnt turn around! 😢or yell at ya ! So sad I didn't get to meet ya and talk! Mad at hubby not turn around! That's why I went there hope another time😢
This looks so amazing ! Adding some whipped cream or French vanilla ice cream would be heavenly. They had those back then, right ? And this is low calorie right ? Your skeleton visitor can afford to put on a few pounds.
I wonder if the Heart in Hand evolved from the Mediterranean hamsa (to ward off evil). Similar design. I made some brandied cherries this summer, but they have pits in them. Not great for a pie.
No. I do not shop or go there anymore for personal reasons. The tin cookies cutters were made by a lady tinsmsith who sometimes comes to events in our town to sell her lovely cookie cutters.

If you're baking this in summer you'd have used fresh cherries and fresh currants.
I wonder if Justine reassembled her Grandma Nancy Rose!
Cherry Pie is one of my favorite pies, I enjoy watching how different baking eas done in the 1800s

You and I must be using the same menu. I made ham and beans before your video came out. And I made a cherry pie a couple of days ago. Lol. Good foods.
Very interesting recipe. There are lots of cherries and no 'binder' sauce.

Did George Washington chop down the cherry tree 🍒 for your pie?? Cherry is my favorite!! 🎉

I wonder if the Heart in Hand evolved from the Mediterranean hamsa (to ward off evil). Similar design. I made some brandied cherries this summer, but they have pits in them. Not great for a pie.
I love to pick the sour cherries and eat them as I do it.
I wonder how often pie was eaten back in the old days. Reading older books, it seems like it was a staple!
It really was because meat pies used to be popular too.
I see the hubby has lost a few pounds! 😊 🎃
The cherry pie looks delicious. Thank you , Justine, for the recipe .
The skeleton with the pumpkin face looks kind of scary.
Very nice 💙🎃🧹💕🇺🇲
Will there be any air guitar in the chew chat?
Thanks! Let me buy the cherries for thy pie! ❤ 🍒
I'm glad you offered Ron some Pie too. He's changed a bit ☠️🤔
Ron’s looking a little under the weather!😂😂❤❤😂😂❤❤
He looks thin! I need to feed him more.
@ he is a little skinny I agree, shouldn’t take too long to get some meat on his bones.❤️
Hi justine how's your health doing?? ❤ from Australia 🇦🇺
Thank you for asking. I'm having a good week this week. I'm just tired but that's a part of it.
I think Jack O' Skelly wanted some pie. 😂 Happy Halloween!
Funny, that skeleton needs to eat a couple of cherry pies, 😂
Is the a mold from candy’s store?
No. I do not shop or go there anymore for personal reasons. The tin cookies cutters were made by a lady tinsmsith who sometimes comes to events in our town to sell her lovely cookie cutters.
How do you clean your "pastry brush"? Or do you make a new one every time?
Man, we really didn’t put much effort into whisk development back then😄
Fruit preserved in brandy? That fruit had a bit of a kick....cause not all the alcohol cooks out
