I worked at sonic years ago and I was the cook, and every single night I had to clean grill like that.
I work at a restaurant with a flat top grill like that. We do that every day yes. Just the initial scrape until we close though. If we clean it all the way, everything starts sticking and it's just annoying. Also we just throw ice from the machine thats like 6 feet away onto it so that cools it down significantly.

Yo x, most restaurants are supposed to be cleaning like that every day, but reality looks sometimes very differently from how it’s supposed to be. Often they don’t have the time to clean that thoroughly
7:10 Three times a day, then the bacon cooker, clean the broiler, Soak the hood vents in degreaser then hose them down, degrease and scour the hoods, Drain the fryer and scrub them, dump the oil in the recycled oil vat, Scrub the floors, smash the ice in the freezer with a hammer, restock the freezer with 3 pallets of produce, clean all the dishes produced from the 8 hr shift before where no one cleans the dishes because they dont want to. all while doing service... welcome to closing shifts and overnights where they squeeze every bit of value you have for $2 over min wage with no tips.
