Beef Cheek Barbacoa Tacos on the Offset Smoker

- Who doesn't love a barbacoa taco? Well this is my first time making them using beef cheeks I picked up at HEB.
Went in the smoke at 250 using mesquite splits for 3 hours, them braised them for 2 hours in wagyu beef tallow I had left over from a previous cook.
Also tested the tuning on my offset, it was off a bit last cook but got it dialed in nicely this time around.

Ask your butcher, even the one at your grocery store. They can get you going in the right direction. Definitely worth trying!
They're really tough so you have to be real patient with them. Got these up to 210 and there was still a little tug in a couple parts. Good thing is they're small so 5 hours for me here and they were done.
