Low-Carb & Delicious Tuna Patties, a.k.a Cakes! An easy dinner idea

    Ingredients
    3 (5-oz) cans tuna, drained and flaked
    1/4-1/2 cup flax-meal
    1 teaspoon dried dill
    2 tablespoons fresh lemon juice
    zest of a lemon
    1/2 teaspoon salt
    freshly cracked black pepper to taste
    8 scallions, thinly sliced
    1-2 garlic cloves, grated
    2 tablespoons olive oil
    2-3 tablespoons of mayonnaise
    1 tablespoon mustard
    2 eggs
    1 teaspoon celery seeds
    Instructions
    Add the scallions and oil to a skillet cooking over medium heat. Cook until soft and golden. About 3-5 minutes. Add the garlic and warm through until fragrant. Remove from the heat.
    Add all of the ingredients to a large mixing bowl and mix together.
    Form the patties (about a quarter cup of the mixture) and place onto a baking tray lined with parchment.
    At this point the patties can be frozen. Once they are firm, transfer the to freezer safe bags and they will keep fresh frozen up to 3 months.
    Heat a cast-iron skillet over medium heat and add about a quarter cup of olive oil. Once the oi is hot, add the patties to the skillet and fry for 3-4 minutes per side. Transfer them to a tray lined with paper towels to absorb the oil and serve.
    Serve them over rice, salad, cauliflower rice, or in a pita. Kali Orexi!

    Of course I crumbled feta through these! Took it to another level. Wonderful recipe and very delicious. Refrigerating these before cooking is necessary as the mixture was falling apart. Thank you Dimitra.

    I love tuna recipes!! Thanks for sharing! I like to put filling between puff pastry sheets and bake them. They are delicious but definitely not low carb 😁

    I love tuna cakes, I’ve been eating them since I was a child and my grandma made them for me. I like to add a few dashes of Tabasco, the vinegar in it mixes nice with the tuna.

    I know yours are low carb, i have always made mine with mashed potatoes, definitely not low carb, but will try your recipe soon!!! Always cooked mine in the frying pan, but have tried the oven they are yum as well!!!

    What kind of olive oil do you use to fry them on medium heat? EVOO or light? I’m worried about trans fat so I’m trying to figure out what oil to use to sauté or lightly fry. Also, I grind my own flaxseed… and maybe use yogurt instead of the Mayo?

    Well done Dimitra for this tuna recipes. Can I use something else apart from mayonnaise? I would like to use oats to help bind by the mixture. All of your recipes are great and so keep going and don't stop. Congratulations. Best be wishes.

      I would think that an extra egg would do to replace the mayonnaise because mayonnaise is basically just oil and eggs

    I use chicken and i put them in flour prior to frying. I quit eating fish when Japan had the Nuclear accident.

    I think i would try skipping the flax. My son can’t have any starch at all and this would otherwise be a great dish for him.

    I’d love to see a recipe that makes cauliflower rice taste more interesting and less like, well, boiled cauliflower. I love the way Greek restaurants make rice, but I need to stay low carb.

      I've been the same way, I've found adding cauliflower with some brocolli helps mask the cauliflower taste and I find it more tasty

    I love tuna and salmon croquettes. It’s one way I sneak veggies in for my nieces and nephews. They don’t realize they’re eating lots of veggies!
    As a child, tuna was so cheap and my mom would make tuna croquettes. When we had extra money, she would use canned salmon for salmon croquettes. They’re both great with rice or fries/chips.
