If you start with the foundation that protecting human rights is the legitimate purpose of government, then you get secularism as a logical consequence. Believing what you choose to believe is a human right and thus, protecting that results in secularism. Hence, secularism protects theists and non-theists alike.

Religion does not? Is it biased towards theists?

“In every country and in every age, the priest has been hostile to liberty. He is always in alliance with the despot, abetting his abuses in return for protection to his own. It is error alone that needs the support of government. Truth can stand by itself.”
~Thomas Jefferson - in a letter to Horatio Spofford, 1814

I definitely support secularism, but I do think some take it too far and it becomes state atheism instead, which ironically is also anti-secularist.
For instance banning people from wearing (outwardly visible) religious clothing (in governmental and educational institutions) takes things too far.
Governmental and educational institutions need to be secular, but that doesn't mean forcing all individuals within to hide their religion, as long as those acting on behalf of those institutions are able to leave their (objections to (a particular)) religion out of their duty.

I have come to similar conclusions. Never thought I would ever get off my hard anti-theist stance, but I suppose time has provided nuance where juvenile fervor once was.

Secularism is freedom of religion, and freedom FROM religion.

Your take on Islam secularism is based on strawman arguments.
Just becuase a type of government has been given by Islam doesn't mean that any system choosen will be based on secular laws.
Islam does not force people to become Muslims. This is a part of Islam. This isn't taken from secularism.
Holding government to be sacred was never an argument made by Khilafah supporters.

He never said that anti-secularism was promoted by Islam. He said that it is more often for you to find people teaching that anti-secularism is in line with Islam than not. There is a difference there
