The crusty stuff on the bottom that you wiped away is called fond. It's delicious because the maillard reaction, you should deglaze instead with wine or stock to retain that amazing flavor. If you're worried about the oil or fat you can always skim it off later!

But if you prefer chicken, try Poulet au vin jaune with morrel mushrooms, similar to your recipe, its an amazing French classic for winter and spring! I love your videos!

Same. Got a 6QT Lodge enameled Dutch oven at HomeGoods for $40 (a red 7qt one was $60). It's been excellent so far if you don't want to drop so much money on a Le Cruset or Staub. Costco currently has a promotion on their Tramontina Dutch ovens where you can get a 4Qt AND a 7 Qt for $45. Great deal and you get Costco's return policy if you don't like them.

One of my favorite recipes to make with chicken and wine is chicken marengo, which is similar to this recipe, but it's a tomato based sauce, vs a cream sauce. And whoa!!! you were sponsored by Le Creuset? That is super awesome! But I don't think the new colors really match the pretty pastels you had in the past. Especially that dark one in the back. LOL! I'd flip if I got a whole new set of Le Creuset pots/pans!

Amazing recipe but I placed the pan in the oven and baked for an hour uncovered and it reduces the sauce which intensifies the flavors and browns the chicken even more. Stovetop and covered felt too steamed.

I have gas oven, Next time I will cook it on medium and then low for the 30 mins. Other than that it it was a big hit with my family. Actually making it again tonight. There were a few things i disagreed with what you did, but that's only because that's how I cook and everyone cooks differently. Other than that and the long vlogs, it looks great. Fantastic food

Coq au vin is one of my favorite dishes! As a french girl, I can tell you this is really close to my family go-to recipe. I usually skip bacon and mustard, but everything else is pretty similar (a good Riesling is the best! This is my Alsatian side talking). Though I recommend you to try rooster instead if you can, it tastes much stronger and really adds a nice depth to the dish. And congrats for your partnership with Le Creuset! i have loads of my grans old le creuset cooking dishes but they are all really brown at the bottoms or have chipped.is it true do you know if they replace them even if there that old? i could never afford all new ones.
