I started the same thing half a year ago on a legendary difficulty, after 130+ hours of gameplay I had fully leveled Argonian with every skill on 100 and every perk, this was hell of a lot of grinding.
I did a run where I got all skills to 100 (which took close to 200 hours but i wasn't too grindy about it) and then I made every skill legendary at once. Horrendous. I recommend it. An interesting concept, I haven't attempted a run to try to get 100% completion because of radiant quests and my refusal to kill Paarthurnax without reloading. Two questions: how are you deciding what is worth taking as loot? I usually look at the value to weight ratio so I usually avoid taking chest pieces and it looks like you were kind of picking up those almost exclusively lol second question is what is your plan for the times when you can only get one item out of multiple options for a quest? like for the Aetherium Crown and Shield and Staff or with the Rueful Axe and Masque of Clavicus Vile or the Ring of Hircine and Savior's Hide? Do you have to collect all of them for the run to be considered 100%? Edit: the second question was answered already in part 2
Honestly looking at the weight-to-value ratio is definitely the best way to do it, but honestly I just go for the higher value items most of the time, regardless of weight. It’s way less efficient, but it’s fewer items to manage. I’ve mom-maxed Skyrim so many times that I tend to get a bit lazy with it😅
I'm attempting this right now, but I'm finding my biggest challenge is the buggy quests that don't complete properly. I have a couple stuck in my log forever. :(

Definitely gotta do the vampire quests and get that awesome bow! Athenas bow I think it was called, soak some arrows in blood!

That’s definitely fair, yeah. I think I will still count them as completed for the sake of the videos
