- Maybe one of the greatest Margarita versions ever made? Sometimes less is more, and this is a perfect example of how a very simple ingredient change can make a whole drink! This is a very simple and easy cocktail recipe you can make at home, whether you're just starting out or if you have been a home bartender for a while, this is one to remember.
Created by Julio Bermejo at a restaurant called Tommy’s in San Francisco. According to Robert Simonson it came together over the course of a decade so no exact creation dates are available. The Tommy’s Margarita was the restaurants flagship margarita put on the menu by bermejo and what made it special was that he took out the Orange liqueur and replaced the simple syrup in modern recipes with Agave. Boom! A legend was born!

Tommy’s Margarita
1 1/2oz (45ml) Reposado Tequila
1oz (30ml) Lime Juice
1/2oz (15ml) Agave

The Tommy's margarita is my go-to margarita and I consider it the best margarita although I do add 2 dashes of orange bitters to it. It's simple and it's fantastic
I love the orange bitters in a margarita as well. I’ll normally do the triple sec or orange liqueur of some kind though rather than a Tommy’s

This is my favorite way to Margarita. I know that the proportions in Tommy's Margarita's tend to vary a bit, but most versions (including mine) have 2 parts Tequila to 1 part lime.
I don't know why I don't make this more often, it is so good and I usually have all the stuff on hand.

Tommy's Margs are my go-to. I also live a block and a half from Tommy's, which is great.
Similar to a Daiquiri which is just lime, sugar syrup and Rum. Looks good!
My favorite margarita! Except I do a 4/2/1 ratio (or 2/1/.5). Sometimes I’ll also do the reposado tequila split with mezcal in the same proportions as a Oaxaca Old Fashioned - 1.5 oz reposado tequila, .5 oz mezcal. Sooo good
back in 2008 i didn't like tequila. i visited tommy's bar & restaurant for mexican food. after dinner julio bermejo himself made me a tommy's margarita und i also tested some other tequilas. since then i love tequila 🙂
I like to add Tajin to my rims for Margs and Palomas -- adds a bit of spice with the salt. If I am really feeling the spice I'll dust the citrus garnish with the Tajin too.

I don’t believe the “Tommy” BS lore, if people don’t have or don’t like Cointreau they have, they are, and they will skip it and use a sweetener to balance it out. Of course agave syrup makes the most sense. Most margaritas I had in Baja beach towns ages ago were lime, syrup sweetener and tequila. In fact a lot of people don’t even know that the classic calls for Cointreau. Everything needs a myth these days

Which reposado is recommended that doesn’t break the bank? To give a reference for what I mean, for Blanco I typically drink Olmeca Altos
I didn't like margaritas until I had a Tommy's. It tastes just so much cleaner and highlights the tequila so well!

The tequila is La Gritona. It's a very nice mid-shelf reposado, with a bit of smokiness, but not to the level of a mezcal.

What I like about a Tommy’s is the fact it brings out a good tequila. You can save the inexpensive tequilas for regular margaritas with triple sec, curaçao whatever.
I love this version. Its basically just a daiquiri with tequila in place of rum.
Seems to me the tommy's is the base point for a "picante". just add a little chilli and coriander and you have a perfect picante!
I like to rim mine with Tajin instead of salt to add that little bit of kick. Comes out really well!
Or add ancho Chile liqueur. It's awesome.
Well, I have done this not knowing it's name and it is good. I prefer 2 oz Tequila 1 Lime .1/2 nectar. It's basically a Daiquiri with Tequila instead of rum.

Anyone else do an expressed orange peel in a Tommy's?
I never understood why Orange Liqueur was in a Margarita. The Agave nectar serves to further enhance the Agave flavor of the Tequila which is miles better than adding Orange as a sweetener.
People tell me it isn’t a Margarita without a cordial inside it but I kind of equate it to a Tequila sour and not a Tequila daisy as it originally was.
I can also be controversial and say I don’t know why orange Curacoa is in a Mai Tai

Hmm, based on your older margarita video, I have developed this, which everyone LOVES: 2oz blanco tequila, 1oz orange curacao, 3/4oz agave nectar, 1oz lime juice. Shake with ice 30 seconds, and poor all into glass
shaking over 15 seconds doesn't make any difference if you're not skimping on the ice.
Substitute tajin for the salt and I’m in

You’d be surprised. Use an excellent tequila and agave nectar. My fav is something like Fortaleza resposado. I thought like you years ago and was very surprised. I like a Tommy’s much better these days. I’d never turn down a regular margarita however if offered one.
4/2/1 ratio rather than 3/2/1, crushed ice, spent lime-half sitting on top, straw.
For me the best margarita has a 4-3-2-1 ratio of a good reposado tequila, fresh lime juice & Grand Marnier…and a about a half ounce of agave syrup

The way I look at it is he replaced the triple sec/cointreau/curacao (not simple syrup which isn't even in a classic margarita) with the agave. It's okay but far from my fave.

Sorry, don't agree. It is a very US thing to do to replace the most expensive ingredient with a cheap sugar substitute, as well as making it less alcoholic.
In the us, the tequila is most expensive. Agave and cointreau is cheaper.

Noooooooo, 1 oz fresh lime, 1/2 oz agave syrup, 1/2 oz Dry Curacao (not Cointreau), and 2 oz of good tequilla like Herradura silver--shaken, not on the rocks.
if silver means what i think it means, might as well use vodka. Reposado is a minimum. Just "flavorless" alcohol otherwise.
I made mine with 1.5oz of reposado and 0.5oz of mezcal. I love the extra smokiness!
