eek...ditch the hairspray. You can get matte/gloss spray varnishes that are polymer clay safe, archival non-yellowing & acid-free to ensure your work is protected.

OMG, what's with the black screen? Are you attaching the stems behind the black screen? You show us colors but how much are your using, I found this confusing. Your final product is beautiful but it's very hard to follow for a beginner.
That part was erased by Yt and I don't know why. :( You need to stick the tiny stems together (4 pieces),add some liquid clay to your carrot,than attach the stems. About the colors you can paint them as you like :) I am sorry that you find my tutorial hard, I will try to give better explanations in my next videos. :*
Was the crate a clay one or a tiny purchased/made wooden/paper crate? Great job. My wife loves making these and your process is quite similar.
