"Phagonometric ink" - And that's true, here in Italy we also use it as a sauce in the "risotto al nero di seppia" (cuttlefish ink added to the typical "risotto", a creamy broth-boiled rice recipe) and that's pretty tasty. I might say, the ink is probably eaten more often than the cuttlefish, which might be a nice compromise between prey and predator.

its an organ or muscle that can be controlled. like their camouflage or a snakes venom glands.
or like your arm or leg your hand. squid and octopod are hyper intelligent but in an efficient way and unconsciously conscience.
to our way of thinking it makes no sense and we wouldnt think they could do what they do. but imagine if your body acted like an ant colony. and your brain was the queen. but it was all one thing.
you could smell taste explore sense and actually see with the way their sensory works. all without even thinking about it. it can change its body shape size texture and color in tenths of a second.
it has complete control of everything its body does is and expels more so than many "sentient" beings
