Some do, but at a certain point it becomes pointless. Plenty of creatures in the Midnight Zone have lost the ability to see with their eyes. Some species have lost the eyes entirely. A few retain the ability to see because they use bioluminescence to find prey.
We thought we were clever, inventing smokescreens, reflective confetti, and flash and flare dispensers to dazzle and confuse onlookers. Turns out the cephalopods had it figured out all along, for several hundred million years. Nice.
Wow... Now an incident I saw while diving in the Bahamas makes sense. We saw a squid ink and swim into the jellyfish shaped cloud to try avoid a sea turtle. Unfortunately for that squid, sea turtles love eating jellyfish. We poured one out for him when we got back on the cruise ship.
im no marine biologist but i would imagine it hiding in its own stringy ink cloud would make it appear larger and out of the food chain. quite a few animals do this "puffing up illusion" it would certainly turn me away and they are delicious to me ;)
