This is a Perfect side dish addition to Thanksgiving or Christmas dinners. It is so easy to make and I just know it will be delicious. Tell the little lady thank you for this great recipe.
And I bet if you blend it a little bit of that corn and made it and do a liquid it would make a killer cornbread I need to stop I'm making myself hungry

Excellent! I've done something similar before but decided to change it one time. I did that in a skillet, then mixed it all up with cornbread batter and then baked it in with with the bacon grease lined skillet.
I made this yesterday for a Father's Day BBQ gathering and, honestly, it was so delicious! I think the key here is being patient while things cook, like giving the onions time to really develop a good flavor and making sure the corn really cooks throughly. I removed most of the bacon fat before cooking the onions, just so it wouldn't be too greasy, and only needed to add a tsp or so back in later on to keep the bacon flavor. One cousin suggested topping it with cotija cheese next time, like the Mexican street corn we love eating here in So California. Thanks for the recipe!
My oh my oh my! I just made this and it is DELICIOUS! We have a dinner to go to this evening and the theme is Italian. I added about 1/4 tsp of Italian Seasoning. I'll be making this again just to have for a meal.
I would call that onion 'rough chopped'. And yes I was laughing at those knife skills. BTW, I make similar side/main dish - smoked sausage cut into coins, fried lightly then add corn and cook till caramelized.
I was more concerned about the sharpness of the knife. Seemed a little too much hesitation before it cut through the onion. As for changing the recipe, I like the sausage and corn idea. Maybe a tad smaller on the onions, but the main thing I was thinking was that peas would be a better substitute for corn.

(When I returned, my wife was like "you know we already have that stuff"- I didn't, I don't cook.) I cooked it like you did in the video. Added salt and pepper. Was worried, nervous, wondering... my wife and 2 youngest kids (11 and 17 I'm an old man..). were like, "You cooked this???? This is DELICIOUS!! What's it called?" I butchered the name. "Bacorinicornonionycon... something like that." LOL! Man this stuff was AWESOME!!

My grandmother used to make something very similar to this. She would go a little farther and add a can of creamed corn and red kidney beans then we'd serve it over either fried potatoes or plain white rice. So stinkin delicious. Just takes you home when you bite into it.
I made this with fresh corn from the cob (it's sweet and delicious this time of year) plus one can of southwest style corn. I also added some frozen peppers (red, green, and yellow bell) from the garden. Not only does it add color but great flavor. I like spicy so a few sliced jalapeños gave it the right heat level. This dish and a pan of cast iron skillet cornbread were the perfect additions to my last dinner party. I'm thinking this would be a great vehicle to use up the leftover meat we sometimes have.

I make something almost exactly the same thing for a bbq side only with some old bay and either jalapenos, poblanos or Anaheim peppers, whichever I have on hand.
Definitely will try this...........would go nice with the Rosemary/Butter steak and potatoes. Just got a Weber Kettle yesterday and so drooling over your recipes.

Nice! I make something very similar but I add garlic and red chillies, then some chopped cilantro stirred through at the end.
