    If you love cinnamon, apples and french toast then this recipe is for you! Now you can turn regular french toast into something special. Cooking the apples only takes a few minutes while they soften in a delicious sauce that has hints of cinnamon and caramel. For the french toast itself, we use sourdough french bread which contrasts beautifully with the sweetened sauce. It’s truly delicious!
    Ingredients for 2 servings
    2 large or 3 medium eggs
    1 Tbsp. butter, grass fed
    ¼ cup whole, or lofat milk
    ¼ cup coconut sugar
    ⅓ cup water
    1 tsp. Ceylon cinnamon
    2 tsp. Vanilla extract, divided
    4 slices of bread, I used sourdough french bread
    2 tsp. Butter, grass fed
    Directions:
    Slice the apples and remove the core. Cut the apples into small bite-size pieces leaving the skin on. Place the water and coconut sugar in a medium frying pan over medium heat. Stir until the sugar has dissolved then add the apples and bring to a low boil. Add the cinnamon and simmer the apples for between 7 and 10 minutes or until they are soft. Add the milk to the pan after they have cooked for 5 minutes and stir. Continue simmering until soft. Then keep warm.
    Preheat a frying pan over medium heat and add 2 tsp. Butter to the pan. Crack your eggs into a bowl, add a teaspoon of vanilla and whisk to combine. Once the butter has melted and is bubbly, place a slice of bread into the egg mixture and then turn the bread over making sure all the bread is coated in egg. Place the egg coated bread into the frying pan and repeat this process with another slice of bread until your pan is reasonably full. Leave room to flip them over!
    Cook until the french toast is a golden brown. You may have to raise or lower the heat to get them cooking just right. It should take 2 to 4 minutes per side to cook. Place the french bread on a warmed plate and top with the warm apple topping and don’t forget to add the sauce too! Enjoy!

    I have made your baked banana oatmeal dish just this morning because I wanted oatmeal. I loved it! I didn't taste the coconut, which is ok. Next time, I am going to blend the oats down just a little. I wonder how the texture would be. (I need to watch this video once I get back from my evening jog!)

      What a coincidence, my son and I were talking about how he doesn't like the texture of oats but he loves those packets of instant oatmeal that are full of sugar. I suggested he try blending them just a little to see if he could get the same texture as those packets. Personally I think it is worth trying. Let me know what you think if you do try it.     I made your chicken and rice last week and it was a hit! Can't wait to try this. Apples will be coming off the trees in no time. I've never tried coconut sugar before. I'll have to try to find that around here. If I can't, would you suggest white or brown sugar as a substitute? Or is there another natural sweetener you suggest? As always, thank you!

    So you are saying coconut sugar is best for baking and for coffee and tea and better for you cuz it don't Spike to sugar level and I'm a diabetic recipe look yummy keep up the good work last evening😊
