I'd love to see Scotchgard versus 303, specifically the automotive or the indoor stain guard. Also, how do these effect cleaning down the road? Like let this year carpet sit for a week, then run a carpet cleaner over it, see how they both come up.

Generally speaking, if the protector is applied correctly it should make cleaning easier because spot & spills won't become stains making removal easier.
Also-protectors make it easier for homeowners to spot clean themselves so professional cleaning may not be required as frequently as unprotected carpet.

No offense intended, but apples to apples would be following the recommended application instructions for each product, not using double the recommendation for one of the products. Is there as pronounced a difference if there's only one coat of the pro stuff?
If done correctly, applying 2-3 coats of a protector does no harm and provides more protection than just one coat, regardless of what the directions on the can say. The trick is not to apply too many coats.
The pro Scotchgard performs better with 2 coats versus one....if you have the time to akllow drying between coats.

Usually it is not necessary to clean new upholstery prior to applying protector.
What is critical though is to test the protector in a hidden area prior to doing the entire piece.
After you apply to hidden area look for:
-fabric dimensional changes like rippling, shrinkage or distortion (like you might see in velvet weaves)
-color changes like dye bleeding or yellowing/browning in linen type fibers.
Apply two coats per directions then let it sit over night and look for changes.
If you notice no change you are good to go.
It also helps to unzip the cushions and look for upholsters' ink/markings which can bleed into the face fibers.

What if the carpet is new?

Most new carpet is made with protection built in.
Some customers still opt for additional protection when new though.
Would you need to clean new carpet with the acid rinse? Or just add on top of manufacturer protection?
This testing only shows how hydrophobic the product makes the carpet but the protectant also claims to make the carpet resistant to stains, ideally you'd continue this video and attempt to blot up all the liquids as one is supposed to and see if any stain remains, with a third patch of clean, untreated, carpet as a control.
Also, it seems to me that with the carpet being slightly hydrophobic after treatment the staining fluids seep straight through the carpet to the underlayment, I would be interested to see if this is true because, if so, I'd much rather the fluid wet the carpet where I can reasonably pull it out than to go to the underlayment where I can not.
