    You are basically par-cooking the green beans (e.g. "partially"). It'll be about 1-2 minutes. It's the point when the bean's color has deepened and the initial rawness has been cooked away. The bean will still be firm, with a slight crisp, but the outer shell will have a softer texture.

    I never prepare green bean before so I want to make sure I get it right. How long do I cook the green beans before I shock it in water?
