Shopping List:
1.5 lbs boneless beef short ribs
1 can kidney beans (rinsed)
1 can black beans (rinsed)
16 oz crushed tomatoes
1 can chipotle peppers in adobo
1/4 cup cilantro
1/2 red pepper diced
1 onion diced
2 jalapenos diced
2-3 tbsp tomato paste
2 tbsps worcestershire sauce
1 bottle of beer
4 cups beef broth
1 tbsp garlic base
3 tbsps brown sugar
1 tsp each - chili powder, sazon, cumin, cajun seasoning, smoked paprika
AP Seasoning to taste

HOW have I not found your channel before now. YT did me dirty by not putting me on game.
Saw the video this morning and made it tonight. I did do the Kevin from the office where I toasted some ancho chilies before searing the meat. Used a little cheaper cut of meat, which meant 3 hours before I could shred. I did the whole can of chipotle and mashed them in the pot with a potato masher. Did use fresh garlic instead of paste and just used regular chicken better than bouillon. Didn’t have Sazon seasoning but mixed my own. Did white chili beans instead of black and doubled the entire recipe. It was pretty dang good man… My family can make some pretty good chili but this one was in a different ball park. Great job and thank you. Had a great day cooking and eating with the family cause of you and that’s what it’s all about.

I've made probably two different recipes of chilli over the years and this was by far the best version I have made. The choice of seasonings is right on point and was absolutely DELICIOUS 😋
I followed the recipe to a T, and this turned our amazing. The best chili I've ever had. It is a lot of work but I really enjoyed the process, it tasted similar to barbacoa that I make, but excellent for a chili. And it continues to get better everyday as the flavors meld.
I had never heard of short rib chili must less made it! I usually use a mix with ground beef which we really like but after I made this my husband said no more mix! It was a big hit with everyone so I'm making it again. Thanks Connie

OMG this looks absolutely delicious! I’m definitely trying this. Before you added the beans, it looked like the beef broth that they dip in the birria tacos, and you can even make noodles and use it for a thicker pho. So many options. 😋❤️😋

I have had short rib chili before. One of my co-workers made it for a chili cooking contest we were having on the base. He actually added tortellinis in it, and he won first prize.

Thanks for the recipe Matt! This one made me an "unofficial" winner of a chili cook-off (I was late and most votes were already in). The winner said this was the best he'd ever had. I'm a huge braised short-rib fan (one of my favorites and most-requested by my friends) so this was extra special. I'm from Texas and beans are a big deal, but after making this... not anymore... Incredible!

I made this on Thanksgiving and everybody loved it. It's probably the best thing I've ever made, let alone eaten. Oh, and it paired perfectly with Creamy Roasted Garlic Mashed Potatoes. Making the Short Rib Chili again tonight, too. Damn it was f'n delicious!

Hi Matt, I made this chili and it was so good! Thanks❤. What I do is buy bone short ribs, season just as you did but I used my ninja foodi, I pressured the short ribs after I satiated l, after that I pressure cooked for about 50 minutes depending upon much ribs you’re cooking. I put all the stuff to make a beef stock at the same time. Strained all of it after, well almost everything!( I ate the carrots and onions).
It’s really good, try it. I use the base for many other recipes. Steak soup, ect.

First, love this recipe, great flavor. I've made it twice now, once with bone in and once with boneless. Each time after 2 1/2 hours the short rib was not close to done. Do yourself a favor and if you have an instant pot, throw the short rib in there with beef broth for 45 minutes. Saves the headache. Not sure if I'm not simmering hot enough or what, but instant pot tot the rescue. I love the flavor of this chili either way.
Is that 45 minutes on the pressure cook setting?

I come from a long line of chili cooks and I think you missed the most important part of cooking a great bowl of chili. The most important ingredient in chili is to cook it the day ahead and refrigerate it over night. Don't know the science behind it, but the rest intensifies the taste of the spice blend. Man, your chili looks awesome, and I will be making a pot this weekend.... and eating it the next day!! Thanks for the video.

I have made this twice in two weeks. This recipe is off the hook! My Family loves it. Made my own Cajun Seasoning, grated four cloves of fresh garlic, used 2.25# of short ribs, other than that I stayed true to the recipe. This is my new go to chili recipe!
