2:20 if you click on the Gradient Texture node and press "Ctrl + T", it will auto-create those other nodes and connect them. Though you need to Node Wrangler addon enabled (already in blender).

I think on the PS1 they would have used like, vertex colors though rather than a whole gradient texture.
