  • Crust Buttercream recipe:
    Butter - 1 stick (1/2 cup).... 113g
    Powdered Sugar - 3 cups+2 tbsp.... 400g
    Clear Vanilla - 1 tsp
    White color Gel - 2-3 drops
    Pinch of salt.
    Cream together butter and powder sugar. Use stand mixer for faster and better result. Add vanilla, salt and gel color.
    Add water later for desired consistency.

    Okay, I fell in love with this technique and today I tried it. Your recipe and process are absolutely perfect! My cookies look amazing. Not quite as good as yours as my base cookies are not nearly as symmetrical and perfect as yours, but the frosting part came out great, and it was so easy to do! And one additional advantage-it was extremely efficient as far as use of materials go. All the cut off pieces are infinitely recyclable, and at the end of 3 dozen medium sized egg cookies I had a piece of leftover frosting smaller than a dime. I ate it.

      I was just thinking the same, I wonder if it will work in the silicone moulds!? My thinking is because of the butter the cooler you can keep your hands and the less we handle it the better it will work! I’m going to try it tomorrow!

    Such a brilliant idea! I have some of the lace moulds and did have the powder to make the “stuff” but haven’t had it for ages so haven’t used them. My family aren’t a fan of the taste of fondant icing but this just changes everything. I’m decorating Easter biscuits tomorrow and was going to attempt the Royal icing but I might just do this instead!!air maybe as well as!!

    Where has this idea been hiding? Lol. It looks like something you could do with toddlers and be less messy! I love the rolling pin as I have one that didn't do well with a cookie dough and I haven't used it since. Maybe it will work on this?

      It’s a fondant / gumpaste roller, ideal for this technique.

    Wow, these are so beautiful, and seem so much easier than royal icing. Did you refrigerate after icing? Also, could you using this icing for flooding, by adding water?

      I use butter only, but shortening will work too. Butter should not be very soft. I usually give them 8 hours before bagging

    After adding dry food color do you knead?... for how long?
    And after kneading do you let the buttercream rest?
    How do you store leftover?
    How long is self life?

      1. I knead until the buttercream is completely colored. 2. No, I work with it right away. 3. I store my buttercream in plastic container in refrigerator about a week, sometimes I freeze it for 2-3 weeks.

      Once when I had some thick icing left over I tried to knead it in my hand and it became like fondant. I even made flowers out of it using a mold. 😁 Rolled Buttercream is much tastier than icing, people love it, but it is not suitable for shipping.

    Beautiful, would you package these without damaging the buttercream? I know it's a little firmer than cake buttercream but if you put them in bags like Royal icing cookies wouldn't they smear or get stuck to the bag? Thanks

    What makes this buttercream rollable. Is it the corn syrup? That’s the only ingredient I see different from regular buttercream.

    Do you know if these cookies freeze well? I have been experimenting with cookies in the freezer, since I ship the cookies. I was told to freeze them so they stay fresh.

      Масло быстро не портится, потому что сахар отличный консервант. Если нужно хранить долго, то можно заморозить и печенье останется свежим и вкусным. У меня больше двух дней печенье не задерживается, но я люблю замораживать все, если нужно куда-то надолго уехать.

      Это не замена, это альтернатива. Кто что любит, с чем легче работать… в моем случае - меня давно просили показать как я использую масляный крем.

      You can store them in an airtight container for up to 2 days at room temperature or for up to one week in the fridge. I often freeze my cookies, always perfect.

    Is the butter you use in this recipe very cold?

      if the butter was very cold it would not be possible to roll it out. You can cool it only after rolling it out to make it easier to transfer it to a cookie.

      Because of the hight amount of sugar, you can leave the frosted sugar cookies at room temperature in an airtight container for up to 2-3 days. If you refrigerate them, they will last up to 6-7 days. You can freeze them for couple weeks.
