Tipping it upside-down releases carbonation to keep enough pressure, the machine is a small anti-griddle, aka a cold plate, meant to drain just a little more heat out of the liquid. At that point, the pressure is what's keeping it from freezing. Once you crack the top, the pressure is released and the ice crystals start to form.
For anyone who wants to try this, you can do this at home. If you set a drink in the freezer for several hours and avoid moving it or jostling it at all, it may go into a supercooled state - the temp of the liquid has dropped below freezing, but it hasn't actually become ice yet. To activate the freezing process, simply tap the bottle on something. And now you have a slush! Works for bottled water too, but it has to be pretty pure, tap water won't work.

I believe you can do this by turning your drink over as demonstrated and placing it in your freezer for a (need to experiment) period of time. Long time ago there was a video of a similar type where the pop was poured into a dish and became a frosty (slurpee)

Me and my buddy use to do this with water bottles in Iraq. After a long day in 120f+ heat on our missions, we always looked forward to those slushy waters. Pull them out the freezer and give them a lil shake and they turn to slush in seconds 🤤.
You can do this at home too. You just need to not disturb the drink and ideally a chest freezer. Then take it out and give it a shake or a squeeze to see it become slush.
The bottles in the fridge are supercooled. It just means that if not disturbed the ice does not form. The light contraption she put the bottle in is there for no reason at all unless it vibrates. As she turned the bottle upside down and back up again, that started the process. The water in the drinks is very pure so needs to be kickstarted into freezing. Normally impurities in the water help seed the crystallisation of ice.

We've had this in the USA before. The "machine" isn't actually doing anything. The fridge is just a lower temp than the normal ones
