Seriously the less you stir the better. Some lumps are ok. Cook IMMEDIATELY in preheated oven. Toothpick test. Once I started doing this my muffins were great.
I always make a Texas style sheet cake, it's like brownies but a lot thinner and the chocolate flavor can be either more intense or balanced depending on how you make it, but if you want to do things the easy way just get the box version at a HEB store

I had to buy an 8 quart commercial mixer to keep up with business (all the small batches were killing my 5 qt). But I kept my 5 Qt bc the bowl in the larger one is literally too big for some stuff. Like it just doesnt work. So just a guess. My second guess is that they want to test it in the pans/quantity they would make to sell. Bc brownies bake differently in diff pans and it isnt a true test run without the same sizes.
Well, firstly, some recipes react differently when the quantity of the ingredients are doubled or tripled..so they had to do it in massive quantity as per normal bakery standards..some recipes are perfect when made in small batches but get very tricky to perfect in large batches..dont worry abt the failed attempt, me thinks they are going to give that unperfect brownie batch to their staffs to eat with ice-cream..trust me coz I used to work in a hotel kitchen..😊
You could try adding melted chocolate and cream to the brownie mixtures. Other way is to lessen the dry ingredients and more on the wet ingredients. Like add more milk, butter, cream and chocolate

He should’ve added melted melted chocolate to the batter and chocolate chips for that fudge-like consistency, think chocolate lava cake but baked about 3-5 minutes longer than the recipe says, then it’s perfect. And why in the fuck would you frost brownies, it’s not brownies anymore, it’s dry ass chocolate cake
So I went to Hoboken in New York and I actually saw everyone like buddy Mauro Joey lisa the other lisa grace Mary and Madeline and I tasted they're cakes and it was over the top but what you're saying is right I tasted his actual brownies and they were not that bad but they were dry and crusty so I didnt really like that much
They are cooking it like a cake...they should have cooked is for lesser time and taien it out of the oven immediately after its dome instead of leaving it to cool in the oven itself and may be once its out of the oven cover it with another tray to lock in the moisture...
add more fat to give the batter moisture, use a double boiler to melt dark chocolate and milk chocoloate then add that to your wet ingredients. try brown sugar and regular sugar to give it more of a fudgey brownie. the dark chocolate will make the brownie richer.
Add milk, the same amount of butter, add yknoe semi sweet chocolate like melted chocolate which is Gonna add the moisture. Bake at 300 and there ya go. It’s not that hard to make a delicious brownie
just from watching, it seems like they are just using cocoa powder instead of a mix of melted chocolate and cocoa powder. that is why they come out so damn dry. the chocolate will help provide the fudginess they are missing. normally any brownie recipe is a mix of eggs and sugars, add melted butter and chocolate and last mix the dry ingredients. it really is that easy. professional pastry cook adding her own 2 cents.

Maybe you need to mix by urself instead of the mixer,cause the mixer might make it to thick or thin
