  • Hi, today's recipe is these amazing brioche burger buns, super fluffy and soft yet they hold the burger very well. Love this recipe, really hope you try it out :)
    Ingredients: ENG
    . 450g strong bread flour, pinch of salt
    . 3 tbsp butter
    . Warm 230ml water and 2 tbsp milk
    . 2 tbs sugar, 2 tbsp yeast
    . 1 egg + 1 for egg wash
    . Sesame seeds
    ingredients: FR
    . 450g farine renforcée
    . 3 cuillères à soupe de beurre
    . 230ml eau tiède et 2 cuillères à soupe de lait
    . 2 cuillères à soupe sucre, 2 cuillères à soupe levure
    . 2 oeufs
    . Graines de sésame

      Hey Toni, good day and Thank you!!!!! GF Flour blend should work if it contains 1/2 teaspoon xanthan gum per cup of flour. Love how baking is all about trial/error/experimenting, endless ways of creating recipes...will try using a GF flour also to see how they turn out. Sure I will show how to make the sweet potato fries in my next videos 😉 Thanks....

    I made this and my family really adored. Thank you so much!! Just one question, my oven is not big enough so I had to do 2 batches. Can the other batch just sit out and rest for another 20 mins to wait for the first one to cook ? Thanks. First time when I did it it was a little bit flatter

      Happy to hear your family adored the buns! Yes 20 min should be fine (depending on the temperature, as it affects the proofing of the dough)

    So quicker than most recipes I've seen. Generally brioche buns take several hours of proofing... I'll definitely try it later!

    Also I recommend to add teaspoon of salt... Salt is flavor enhancer and need to be pretty much in everything...

    Returning to this video after having made it before, great recipe. One caveat, I made rings to hug the buns out of strips of tin foil to direct them up as they rise. I like nice tall buns 😉

    Just made these, they are amazing.. the smell is amazing , it was so easy to do! I made 4 big buns tho , and I also covered them with a towel after taking them out of oven and they became more soft ! Anyway, if you didnt try this yet, dont waste your time and do it now!     I think this is the fastest method of burger buns out of all the others that I've seen, definitely gonna try this and might be my go to recipe once I've tasted it. Thank you for sharing.

    Is it possible to use all purpose flour rather than bread flour

      Yes you can, but with bread flour you'll get more elasticity, the dough will rise and have a good structure as it has more gluten.

      You can, but all purpose flour works better for cookies, muffins... strong flour enables the dough to rise with a good structure wich is better for breads (as it has more protein).

    I did this recipe twice, and both times the bun would not get a golden crust. It would remain pale, even with additional 15 minutes. Not sure whats happening, but i did exactly what the video did

      If you followed all the steps (adding the egg wash on the top ect) and didn't get the golden crust, it could be the oven's temperature!

    I have tried this today, but somehow my dough stays very sticky. It's impossible to start forming anything, as when i touch it, it always sticks to my fingers..

      Somehow different types of flours can act differently, adding a abit more flour when dough is sticky will help (flour I used is a strong flour, high in gluten) hope this helps if you try it another time.

      I kept the doe in the fridge overnight, so maybe it developed a bit better when i get back home from work..

    Was your flour amount 450grams? What is that in cups? My measure is in C. Not grams. Your recipe looks amazing but I'm not a baker but want to be. I'm trying to make different breads and baking goods and I'm trying to learn. Please help me. Thank you so much.

      Thank you 😊 It was around 4 cups + 3 tablespoons of strong bread flour (which has high gluten content, works well for burger buns and pizza dough...) There are two other bread recipes in my channel (Soda bread and pita bread)

      Yes you can, just make sure the flour is sifted!

      The more yeast you use, the shorter you need to ferment; this should be categorized as "Brioche Styled" quick bread. The kneading technique is also pretty fast. This works if you're on a hurry and just need "same-day" burger buns.
