I was blessed to live a block away from their trailer when they were just a trailer in a parking lot and we loved what they served back then. When they built that space just up the road, I was beyond thrilled. I'd wait for them to post on FB every Saturday, no line, lots of brisket left and we'd beat feet up there. We've never been up there that one of the owners didn't greet us and ask how everything was. It's more than great food. It's great service and great people. They've loaned smokers to competitors who had fire destroy their restaurant so they could fight and keep their business alive. They've really given back to others in the Lubbock area and I'll proudly continue to support them. 💜 now if only we can get that jalapeno corn on the menu permanently. 😉😄
No one cares
@@jiwilliams2026 funny. It's attitude like yours that no one actually cares abt troll. Go back to your irrelevancy.
@@jiwilliams2026 LOL!! Ya stop bragging Connie
@@jiwilliams2026 I care . That was very enlightening Connie.
@@jiwilliams2026 awwwwww jealous cause he cant taste it🤓
big respect for charring, peeling and hand chopping the chilli’s for sausage, love seeing that much care and effort 🧡🧡
I love Hatch chili’s!
Love watching these videos - entertainment, educational, appetizing and a celebration of people mastering their craft. Thanks for making them! 😊
Absolutely agree!
That green jalapeños inside the trash bag is a big NO. Trash bag plastic are not food grade material 🤮
I live in Africa and have never been on a plane, I've decided that one day I'll come visit. 😀
Some of the BEST BBQ in the US! Just moved from Lubbock to Dallas and Evie Mae's is something that is extremely missed! Y'all are the GOATS of BBQ!
Check out Goldee's and Panther City
Love this place…but far from some of the best. There’s better BBQ places in the rest of Texas. San Angelo near by will get you good quality BBQ. Hill BBQ at Yellow house coffee by far outclasses Evie Maes. Even The Shack is better. Big Es BBQ…even better….don’t get me wrong it’s great to go and grab a free beer while you wait or eat, but I’m afraid this place is more overhyped than anything…but that’s just what Lubbock does. It overhypes things. K know I sound salty…I just don’t get the hype.
@@nando2139 bro. It’s all opinion. You can’t tell someone what the best food is. It’s all subjective. Make your own comment
@@trillnix3043 It's only subjective to a certain point. There's a very clear difference between good food and bad food. Nobody is going to choose a undercooked, underseasoned brisket over one that's been perfectly cooked and seasoned
Also Terry Blacks, Hiem and Pecan Lodge
I am a chef of 30 years it takes a while to master brisket. These guys are master brisket and BBQ chefs. Dahm looks amazing
Haha chef Ryan clearly it's easy these days to be a chef
@@ndabarishebahoza5633 go find out
@@ChefJ_reece found out what ? How can't ya be a chef with all these videos on UA-cam
It really does take a while to understand brisket... you can watch tutorials all you want, it wont work for some weird reason
@@trlckykid sit on your ass smoking a cigar and drinking while you keep the temp at about 220 to 275 for 6 hours or so. Then you put it in the aluminum pan for another 6 and it's done. Easiest thing ever.
to create a restaurant and such a well done menu, and to build stuff from scratch and then to serve it all up consistently ... takes thousands of hours and patience and generosity to employees.... respect
Oh man I'd travel from Toronto Canada down south just for this place. Looks amazing I love the dedication and the science behind every choice
I never thought you could take BBQ to such a level with so many steps. The team certainly gets my respect.
This makes me wanna go to Texas and try it for myself! It's so inspiring, listening to someone being a complete nerd about what they do. I can only imagine, waking up and thinking about new ways to perfect a craft like they do everyday!
I live in Lubbock and Evie Mae's is some of the best BBQ I've ever had. There is a line before they open every day. Thanks for spotlighting them.
I started my own bbq pop up at my local market a few months back! It hard work but I’m enjoying it and learning all the time. You inspire me and your operation looks amazing! Thanks for this video👍🏻
Hell yeah brother keep going🤘🏻
This is the best BBQ place I have ever eaten at. It sells out quickly. Everything on the menu is excellent!!!
The gent and his team deserve all respect. They turn this job to art. Much appreciated.
Born and raised in Texas, and I can tell you just by looking at the ribs and brisket that it's probably some of the best BBQ money can buy.
So many people think that if the rib is tender enough to pull the bone out that it's good, not true when I see that I immediately know they won't be worth eating. Nice to see someone with that knowledge. One day I'm going to make it down there to try this place out.
I'm really proud of this place, it's fantastic. This area hasn't known BBQ this legit since OG Stubbs to be honest.
Rip stubbs
The Shack was really really good
I never had OG Stubbs because I'm too young but I hear he was amazing at his craft also. I use the spice blends that carry his name at home proudly knowing he was in Lubbock. The green chili chicken kit is so good for tacos.
This just looks awesome! So much passion and love going into it. A piece of art i would call this
Love how you shared the detailed steps of your cook. Respect! I'll come visit next time I'm in the area
Can never get enough of these bbq videos 👍
You have a great understanding on who to cook, great barbecue understanding who you what to cook everything, and have a great team to work together with.
I'm a totally into brisket and not that big of a sausage fan. but that sausage stuffing/filling looks incredible! Would love to try them
Ate at Evie Mae's last time I was in Lubbock. Definitely top couple briskets I have ever had. Nice to see what went into the meal.
This look so good. From South Africa i will never have the joy to taste this amazing food.
Best BBQ ever! I may be biased but I’m pretty proud of my cousins for creating a business doing something they love! If you haven’t tried it, I highly recommend making the trip. They weren’t ranked top 10 in the state multiple years in a row for nothing.
amazing how so many places do the same exact process yet they can be so different. All in the care & detail throughout the smoking process.
LOVE seeing that green chile roll, man! Combining that with BBQ is sheer genius!!
Really great video. Every step well-attended, described, and appealing. Well done!
Love BBQ and could watch them all day. This was great.
Evie Mae’s is great! I really appreciate him being so open about his methods.
I believe he went and coached the Frenship school district bbq team also a few years ago. He has shared his methods, equipment, and passion with the community in many ways.
Man….I love the use of Hatch chiles instead of conventional jalapeño. Next time out west, I’m stopping in to check this place out….looks legit!
Great job, guys!
Your a great person Robert keep up the great work!! You just really made my day with this video bro!
That chili roaster so cool. Brings backs memories of seeing them outside grocery stores
We visit there everytime we come to Lubbock. Nathan was gracious to give me a pit tour and talk Q for a while on one of my visits. Awesome folks, awesome Q!
Love this man's passion for cooking BBQ.
All about this looks awesome. Incredible amount of work behind the sausages.
Shout out to Emma Mendoza working the pit! I don’t know you but much respect!
I love Evie Mae’s! Great food, great people and this was a great video!
Wow! That all looks amazing, and I love your story. Now, I feel like I need to book a flight from FL to Lubbock and get some of this!!!!
Absolutely love seeing green chili here, people are missing out! It is so good
This BBQ is the best I have ever had. Great place get there early people and enjoy!
New Mexico Chile is one of the best foods on planet earth. Brought a tear to my eye hearing you say you replace jalapeno with green chile wherever possible. I need to take a road trip out to this place. I want to drink the chile broth!!
I remember when you could play and affordably try new things when cooking a brisket... that joy has been stolen.
Keep doing what your doing brother. We are hungry and the community need you.
It’s Amazing how you can take a traditional product and make it a masterpiece!!
Evie Mae's is the best! So proud of them! If you know, you know, so don't miss out on this West Texas treasure!
when i came home from deployment to visit family my best friend brought me here and i have been craving going back to Maes the last 4 years. its the only place i recommend to people who travel thru the area. we dont get good quality Texas Style BBQ in VA due to our location so when someone brings up well just go to mission bbq and im like nope you bring me the meats i will show you how its done. people outside of Texas just dont get that you dont need all this fancy stuff to have good quality bbq. Maes takes the simple process and sticks with it and thats why its so good.
christ there is so much prep involved here! lots of love put into this food and it looks delicous
So much work goes into a good bbq well done guys looks lovely
Greetings from Sweden!
Loved the video, Great content!
Bruh these guys are legit and that brisket looks amazing.
Amazing and inspiring stuff guys 🙌🏽 well done
Incredible video! Thank you.
I’m literally happy crying as a fatty. I was raised in Texas so bbq is my first love. But I also lived in New Mexico for ten years so that green chili smell is nostalgic for me. So to have them both is a dream.
you should stop by and get some brisket!
Lucky enough to live right down the street from Evie Mae’s here in Wolfforth. Great consistency in all their meats. Been eating the best BBQ from them since they had their food truck down the road from the current location. Really cool to see them highlighted on Eater! Always super nice friendly staff and the free beer is awesome!!!
I was down the road from them too behind the Dixie Dog that closed a few months ago. We moved abt an hr away and still make time to drive up several times a year. Sooo good.
Awesome that he is keeping the NM green chile traditions going!
I live 2 hours away from wolforth ,tx . I have been to evie maes twice and I will tell you , this is some of the best BBQ you will ever eat! The pork ribs are to die for, they melt in your mouth , so tender. also the beef ribs are so good! Brisket is so moist! Green chili cheese sausage is delicious. You have to try Evie Maes! Best BBQ around these parts!!
Awesome video!! Arnis, Mallory, and crew are amazing people! I'm so hungry now.
Looks Great , Love All Your Methods Going To Have To Come Check You Out Next Time To Texas ! Y'all Rock ! 😊😊😊💯💯💯
as far as being the first BBQ joint in west Tx, I was quite amused, I worked for dougs BBQ in amarillo tx in the 1970s ,Dougs bbx had been there for many years as well as others or more in the area, this was before you were born so understand you may think you were the first but I hope to visit your restaurant soon! keep up the good work !
love how every person is a educator in the video, explaining everything... god i wish teleportation was a thing
I doubt I'll ever be in Lubbock TX but if I ever am this is the type of place that I like to support. I wish I had some of that brisket right now.
Very impressive my Man 👍🏼. I'm from Hatch , NM and that really passed my Visionary test! 💯! 🙏🏼
BBQ and Hatch chilies!!!! I'm in!!!🤘🤘🤘 I love BBQ'ing as well. Nothing is cooler then when the kids ask, papa make ribs this weekend' then seeing a pile of bones!!!👍👍👍
That end speach made the whole video for me, grats !
Always high on the Texas Monthly Magazine's list of 50 Best BBQ Joints in Texas. Eaten there...it's the real deal. Free beer while you are in line, super friendly/helpful folks, always cheerful...it's disgustingly tasty tender grub!
Everything looks amazing!
brisket and velocity uttered in the same sentence. Respect!
He has great attitude. I dont even know him. God bless you brother
Nice New Mexico green chili with Texas brisket. A match made in heaven.
Smoke Point!!!! Thank you Eater 🤤🤤🤤🤤
being from new mexico seeing the green chili made me happy
The U.K loves a good BBQ, but the irony is that it is incredibly rare to find a pit, smokehouse or even a regular BBQ restaurant with this much care and nuancing behind the cooking. This is incredible
I love BBQ here in Australia too, but we only do shitty grilling and so frequently on hot plates which basically means the food ends up the same taste as cooking inside with a pan. I blame the British for importing the lack of food understandin to Aus.
I found an amazing place just outside London recently. In a literal tent on the side of the road. A guy from Iraq had been a chef for 20 years and had gone into partnership with a butcher. It was amazing food and made with pure passion. Places exist but very few, unfortunately.
I'm surprised to here that the UK "loves" BBQ. I'm from Texas, and the UK isn't the place I think of when I think of BBQ places.
Yeah man. From the UK also. American/Texas BBQ just a different level 😀
@@SmellsLikeNirvanna you've had plenty of time to unfuck yourselves 😂
The intro of She Drives Me Crazy is iconic ... still is :)
This brisket slapped between brioche and some pickles/onion, jesus christ I need it now
Please do not use The Lord's name in vein.
Thanks.
Please use correct grammar. Thanks.
Thanks
great stuff and such simple seasonings too
So nice to see the Hatch green chiles!
Kudos to him. I love our side the Box thinkers! If I ever go to Lubbock I’m definitely going there! 🥩
I lived in Amarillo in the mid-70s, and their "barbecue" was a disgrace. Underdone meat, "BBQ sauce like water, and a starch overload with white bread and potato salad. SO glad to see that someone is raising the bar in West Texas!
Look good. Just shared this to your facebook page and will add it to our list of good bbq on our site. I can't wait to give you all a try.
Excellent video I hope I make it to Texas one day to try this
Evie Maes is the best BBQ I've had to date going out to Kennedale, Texas for my birthday to try Goldees!!!
That my friend is one juicy palatable brisket! Would love to go try it some day! Love from Cali❤️
wow. amazing job guys. great video and i am hungry .
Really well done documentary
From whats shown here seems like each n every of embloyees behind production feels quite comfortable whith various posts and products. Pretty confident about what theyre doing. Rly seems well organised and rotated workplace.
By far the best BBQ I’ve ever had!
I grew up in Houston and we hunted and fished a lot. 3 Brothers playing football so we ATE a lot. We had 2-3 briskets a month (I remember 19 cents a lbs) and cooked them on the old 50 gallon barrel BBQ pit with mostly oak. There were no wood chips in grocery stores back then but we had hickory too
very very nice Video. Awesome Great story. If I ever get to Lubbock.
This looks so yummy. I would love to try!!!
I'm from Central Texas and of course love our style of BBQ however I definitely wanna come out West to check out this spot. Y'all sold me at green chilies. 😋
Salute to this pitmasters this business is not easy.
Retired, and last March, made a trip from Florida to Austin, and spent 4 days visiting BarBQue joints. Better than any Michelin Restaurant, Morton's of Chicago, or Chris Ruth's, Texas is the PLACE. GO Abbott.
0:42 dang that looks proper 👌
These people love what they do. 👍👍🇨🇱
I’m glad I smoked some pork ribs yesterday because that’s cheaper than driving to Texas!! But if I lived there, I’d be there once a week or more!
Ha this came up randomly but it's badass with the flames & homemade metal machine cookers... great video the food looks awesome
I’m so glad I live a couple miles away from this place
I had the pleasure of eating at Evie Mae's with my father a few months before he passed away. At the time they didn't have a liquor licence, and just had a couple coolers of beer set out for those of us queued up for them to open.
That's how it's always been. Free beer when they're open. Love this place.
BBQ Is Life
Mmmm fresh roasted green chile for sausage Love this so much!
