Rune Olsson usually it's quite a gentle transition but within a year you will notice a difference. It's very dependant of the relative humidity and the woods used, but you'll hear the difference clearly within a couple of years
In my opinion, I don’t think the hide glue makes any meaningful difference. Just hype. No one can prove it. Even if you built two exact guitars from the same trees, and used regular vs hide glue, they would still sound different apart from the glue. Vts or bracing on the other hand can be noticeable. Btw, I had two Martin authentics and older is not always better. The hide glue, T bar or ebony truss rods, and glued in saddles likely didn’t enhance sound, but just made it a pain for maintenance. Since no one can prove these changes make a difference, people simply argue it sounds different from the combination of everything... please. The authentics sound great because of the light build, authentic style bracing, and the Adirondack top with Madagascar back and sides.

laurens b you would hear a difference in the wood opening up. How could you isolate the change due to the glue?
