I have made this twice now, & it is amazing. My wife & daughter have labeled this a regular for our dinner rotation. The first time I made it, the entire pork shoulder disappeared before noon the day after I made it. For the second go round, I made a larger roast. Thanks for sharing this one.
Chef John provides me the inspiration to cook my meals! They are simple to follow and he doesn't sound like those high end chefs who always try to praise the dish and sound technical. Also he is a necessary thing to my sleep. His voice is like a lullaby, I can sleep at noon and at night after couple of videos. Lately I work too much and exercise too much, every part of my body aches and I can't have a good rest, but until I listen to this, I sleep immediately. I will forever be your subscriber hehe.
Made these today. Used two oranges, added smoked paprika, more cayenne, added two garlic cloves, 1/4 bar of chocolate and fresh brewed coffee. These turned out leaps and bounds better than expected. Youve got to put them on yellow corn tortillas, flour tortillas dont go well with them. Best tacos ive ever had!
A very popular recipe in Mexico is to marinate the carnitas in Coca-Cola (the mexican one, the one with cane sugar). I think that if you boil the pork with coke and the add some more before you put them in the oven (to glaze the sugar) it will be very tasty. Also, try to use some other cuts (pork calf and ribs are excellent cuts to make carnitas) and combine all in the taco, it will make it awesome. In Mexico we use all the parts of the pork and combine it in the same taco (what is call "surtida" spanish word for "assorted"). You should try it, I´am form Mexico and use to breakfast this a lot in local markets (yes we serve this as a breakfast dish) and my uncle use to do this
I just did these last night. They were amazing. I glazed them with more juice/fat between baking and broiling. Thank you Chef John. My friends and family think I'm a chef whenever I follow your recipes.
Amazing recipe. Just wanted to show my appreciation for Chef John. I watch Food Wishes constantly for general cooking education. This is one of the few times I've followed one of his recipes almost exactly, and as with the others, it was so freaking good. I added chipotle powder and cinnamon in addition to this recipe. Subbing 2% milk for whole also worked.
BEST carnitas recipe EVER. I've made it 3 times in the last 3 weeks! Delicious. Looks gross with the milk, but this is so succulent and tasty! Love your channel!
Pork carnitas are in the pot as I'm typing and it smells so freakin' good in my home! My tacos are going to rock the house. Thank you, Chef John...I love your knowlege, humor and the sing-song way you speak! I can listen to you for hours, and I often do because I can't stop watching your videos once I get on a Food Wishes marathon. lol
There are so many things to do with meat, but crowding is not one of them. I can't get enough of your humor! When with you,, Laughing and good food is what to expect! Thankyou!
I made these yesterday. And they came out delicious. I used a can of evaporated milk and the rest 2%. Also added garlic cloves, Pablano pepper, and fresh oregano from the garden, to the pot.
It's bad to watch these videos when you're drunk, they look out of this world! I've been watching your videos for about a year and I love them. (swear not just because I'm drunk!) Also my boyfriend who's been vegetarian for 2 day almost cried watching this video.
Not sure how I came to find your videos, but glad, I am! The food you cook got my attention because I'm a foodie, but your verbage is what really got me to stay. Fyi, new sub here🙋♀️
Humility is a beautiful thing. I'm glad you gave kudos to the original recipe but like you said, yous is still good so that's great. I cannot wait to try it
Lyndsay Wells, The Kitchen Witch I did the same thing just recently! My slow-cooker "carnitas" were so succulent and crispy (when finished off under the broiler), they were a huge hit with my tasting crowd. Hmm. Say, Chef John Food Wishes; do you think this might work in the slow-cooker using your creme freshe recipe, or would you still recommend milk in that regard, since we wouldn't be suing the remaining juice?
Oh my God. I was not ready for that ol "SMASHA SMASHA." That's when another level of amazing just turned on. I can't wait to try this. Thanks again chef John.
Chef Johm I love your videos, sometimes just to give me ideas on how to use/handle ingredients that I have bought. This was the first true recipe that I made from beginning to end. It was easy, your narration is so helpful, and everyone loved it! Thank you.
Came out fantastic. In the past I had braised with just water and orange, the milk definitely added a lot. I also added a dash of cinnamon, makes for a great aroma.
I'm watching from Paris, France and I'm dying to make this recipe. I had some home made carnitas in Los Angeles. What a treat! They were the high light of my trip! The only problem is getting decent tortillas in Paris.
As respectfully as I can say this, +pinkdragonflyx3 , I honestly thought you were vegetarian - if not outright vegan - until I read the part about diet coke...then I busted up laughing! LOL!
I've made this and your crispy slow roasted version. This is the one everyone asks for ("You're not making that OTHER one are you?"), when they hear me mention that I'm making carnitas. Easy and delicious. Many thanks!
I've made a similar version, but with condensed milk instead of regular whole milk and some coke in addition to the orange juice. Also adding some cinnamon and cloves. You may think that's a lot of sugar, but it works really well.
A TW I hope he applies to that to his own restaurants. I ate at his new place in Atlantic City and it was honestly not half as good as a restaurant that would cost half as much. Pretty disappointed. I imagine though it's hard to stay on top of a restaurant & maintain quality control when you're also running a TV show (which is why I usually stay away from any "this restaurant is owned by That Guy On TV" places.)
A TW He is a bully. Sometimes that is necessary to change people, but you can't deny that he's a bully. He's like a military drill sergeant who breaks you down to build you back up. I really dislike military drill sergeants.
Chef John, if avocados are available, you must try Carnitas with guacamole also. Chopped onion, cilantro, Salsa and guacamole with a roasted jalapeno to take bites from. The ultimate taco!
That recipe necessitates a bottle of MEXICAN COCA-COLA.. it has cane sugar NOT HFCS. or a clove and some brown sugar at same point the liquids are added. 😎 That’s the OG street method(not the brown sugar and clove,, that’s just for those unable to get the Mexican Coke) Chef Johns is a very traditional - yet modern take on carnitas! YUM!
Fantastic Chef John! Thank you for sharing, I have prepared Moo Shu Pork Tacos and shared the recipe with others but will definitely try your Carnitas as well.
I made your last carnitas and they were fantastic. I will surely be making this soon. Milk and orange juice seems a very odd combination to me. But I have been surprised by your recipes before. Your goulash is a staple in the winter months in my home.
Finally found pork but on sale! Made this tonight and we loved it! This is definitely on the do again list! By the way some jalapeño ranch on the tacos goes wonderfully!!
@@reverv LoL I saw the authentic Mexican style carnitas with the coke+ condensed milk+ the skin + pig stomach cooked in that big pot!!! OMG it looked sinfully delicious! I would have no regrets either!!! frfr
I'm late to the party on this one, but if you put a stick or two of cinnamon in the braise, it's pretty amazing. I'd never used milk in mine, but I've read about it in the past and will definitely try.
This has certainly become one of my favorite meals that I make at least once a month ... and yes, I do remember that time when I was seven and drank the sour milk😂
very nice, ive never tried using milk to braise my meats...i could see how it could add a little richness to the meat though...have you braised any other meats with milk before? if so what are the results and do you have a vid of it?
ferretchucker orange for lemon - yes but probably wont be as good. the orange adds a nice subtle sweetness. milk for cream - I'm going to say no... all that extra fat would be gross. pork for chicken - sure, but it wont get the same amazing juiciness you get from the pork shoulder.
I've been making this for years with the orange using "country-style" pork ribs. I kept hearing about braising with milk, but it sounded disgusting. Now that I've actually seen it in action, I'm going to give it a try. Thanks for making yourelf the guinea pig! /;)
Check out the recipe: www.allrecipes.com/Recipe/242405/Orange-and-Milk-Braised-Pork-Carnitas/
Try condensed milk.
I'm mexican , watched 10 UA-cam vids and trust this is the best one !
I have made this twice now, & it is amazing. My wife & daughter have labeled this a regular for our dinner rotation. The first time I made it, the entire pork shoulder disappeared before noon the day after I made it. For the second go round, I made a larger roast. Thanks for sharing this one.
What I love about your recipees is that they're aproachable, easy to understand and delicious. The wife and I enjoy practicing your recipees.
Made this for dinner tonight. Wife's reaction: "OMG this frickin amazing!" She rarely swears so thanks for the recipe Chef John!
Instead of using oil use lard cuz you need it to fry the pork
Frick is a curse word in your household
@@everythingque4635 either that or "frick" is just the censored version 😉
Did it taste like milk?

Whoa....game changer
Handmade...corn tortillas. Nothing else like it. 😉 and yes flour tortillas don’t go with carnitas.
Hey dingyman, you did not make this at all. Your discrition of your technique is self-refuting. Ha ha.
Dude...what do mean fresh brewed coffee??? Chocolate??? C'mon now...pony-up on the secrets. How much of each and when??? I've got to make this!

Chef John: "Always use the amounts from the blog."
Me, a Food Wishes veteran: "Nah, I'm gonna wing it. That's just me cooking."
I just did these last night. They were amazing. I glazed them with more juice/fat between baking and broiling.
Thank you Chef John. My friends and family think I'm a chef whenever I follow your recipes.
Truly amazing. Next time I will have to double the recipe because I couldn't stop eating it before I served it for dinner. Thank you!

I made this using the Instant Pot for the first two steps (30 mins). Amaaazing!
I’m glad you commented bc my first thought was making this with the instant pot...
Most entertaining and excellent recipes in UA-cam, EVER!!! - Thank you Cheff John

Instead of pork can I use tofu and instead of milk can I use diet coke and instead of oranges can I use watermelon?
Will it taste the same?
As respectfully as I can say this, +pinkdragonflyx3 , I honestly thought you were vegetarian - if not outright vegan - until I read the part about diet coke...then I busted up laughing! LOL!
Mya it will taste better
Mya instead of pork i used an old nike sneaker and warm toilet water with a plastic apple and it was horrible
Uh...What???

Making this at the firehall. Guys are going to love it.
Aweome! I eat carnitas quite regulary and never knew how it's cooked

Condensed??? You mean Evaporated?? Like... Leche Clavel?
I'm so making this tonight for dinner!! Thanks Chef! Amazing!
My mouth is watery... I need to try this.
Made this and it was insanely good. Thanks Chef John.
What can you do with that left over liquid that they cooked in? I imagine that tastes absolutely amazing...
Kethzia Martinez Surprisingly it doesn't. You can reduce, strain and moisten the meat, but I prefer my tacos dry.
Food Wishes i like my tacos wet ;)
MyBoogeryBooger Sounds like youre refering to another taco altogether lol

Fantastic Chef John! Thank you for sharing, I have prepared Moo Shu Pork Tacos and shared the recipe with others but will definitely try your Carnitas as well.
Wow, it looks delicious and very similar to carnitas. Greetings from México!!!!!
Best tasting carnitas I ever made at home and the flavor was on par with the ones I ate on a street in Mexico.
Thank you very much! I had never made a braised dish like this before and it turned out great!
I made your last carnitas and they were fantastic. I will surely be making this soon. Milk and orange juice seems a very odd combination to me. But I have been surprised by your recipes before. Your goulash is a staple in the winter months in my home.

Been following you the last few days and I think you are great. Maybe even better than Jamie Oliver who is my fav.
My God, this is amazing!!!! Thank you chef John!!!!!
This recipe was amazing! Made it!
Can I do lime or anykind of citrus fruit instead ? i dont like orange
usually in mexico they use either evaporated milk or sweet condensed milk to give that crisp texture at end
milk is not used for cooking carnitas ; its added at the end to the fiery hot oil so that it crisps up your carnitas meat
So you add it and cook it out?
This is why Mexicans are chubby. We eat this stuff. No regrets.

I like the glass tile backsplash @3:55 reflected in the pot cover.
Nice catch :) that is quite pretty. :)
What can we do with the left over pot of juice/milk/spices? Can it still be used as an effective marinade? Or as a sauce? Any ideas or advice?
What do you do with the braising liquid afterwards? Just discard?
This has certainly become one of my favorite meals that I make at least once a month ... and yes, I do remember that time when I was seven and drank the sour milk😂
This is still one of the most legit home recipes for carnitas. Bravo. #salza
You are so positive and awesome when explaining how you do things =)!

really delicious .HEB sells MIXLA corn/flour tortillas. They are so good and retain their good texture.
I'm curious. What's the benefit of using milk to braise the meat?
Excelente recipe and super easy.!!
Can you substitute the orange for lemon, the milk for cream and the pork for chicken?
ferretchucker
orange for lemon - yes but probably wont be as good. the orange adds a nice subtle sweetness.
milk for cream - I'm going to say no... all that extra fat would be gross.
pork for chicken - sure, but it wont get the same amazing juiciness you get from the pork shoulder.
That would be a different recipe. Lemon and chicken... sounds like a Greek recipe to me.
ferretchucker this made me laugh!
WOW.. Making this tomorrow! Thanks Chef!
Looks so delicious. I love your channel.
Looks so yummy! Is that the same as pastor carne? If not, can you please do a video on that? Thanks in advance!
Of course, this is a bit of an antiquity, but, what did you do with the braising liquid? Please tell me you didn't throw it out (back then)!
