Chicken Afritada is another popular Filipino dish. Pieces of chicken are cooked with carrots, potatoes and bell peppers. In this recipe, chicken pieces (thighs and drumsticks) are marinated in soy sauce and calamansi juice and then they are cooked in garlic, onions and tomatoes. I used old style cooking, marinate the chicken first and then parboil it before sauteing. Hope you will like this recipe that my mother taught me.
INGREDIENTS:
1500g chicken
8 cloves of garlic
2 medium size onion
2 medium size tomatoes
2 medium size bell pepper
1 medium size carrot
6 small potatoes
2 tablespoons soy sauce
2 tablespoons calamansi juice
1/2 teaspoon ground pepper
1 tablespoon fish sauce
1/2 cup grated cheddar cheese
1/4 cup bread crumbs
5 tablespoons of cooking oil
1/2 cup water

When my lola cook the afritada she use camote instead of patatas and she used fresh tomato as sauce, but with out that much of other things to upgrade the flavour , I remember when I was young she use to cook this and she will put too much camote so that the afritada will last for many days of eating because of the sahog is more than the manok. I like your well detailed version it has so many things that will spice up the flavour of the chicken it reminds me of my Lola and the flavour of afritada.
