    Remeber my great grandad saying they salted pork this way. If it gets old it may take on a green hue to the rind..he said they cut it off and used the rest never got sick. Hooe this tidbit helps

    before cooking ,its better put it into the water for an hour,,to extract the salt out ftom meat ,reducing of being salty tast..love your channel ,from philippines

    If you can find the episode Over The Range by Malcolm Douglas it shows how they did it. Big cuts in the pieces of meat to a allow the salt to get in the meat.

      Sure you can reuse it to cure more meat, but you first have to dry it very well. Leaving it under the sun during the summer is the best method, make sure you spread it out as much as you can and every 2-3 hours mix it in order to bring the wet salt on the surface. Alternatively you can dry it inside an oven in very low temperature around 50 Celsius.

    Look into ' Edwardian Farms' this method is how they stored large (whole animal) cuts of meat using just salt, sugar ( to slow down the salt so it don't burn the meat) and spices for flavor - such as cloves.

    I have a question...Did I understand correctly? You store the dried out pork in cool water until use? In a cool dark place if you do not have refrigeration?

      Is this shelf stable once preserved like this? Just put in an airtight plastic tub with lid? (no water)

      Hi Karen, yes just leave in salt, then when you want to use it, Just soak several times in fresh water to rehydrate and remove most of the saltiness, but it will still be a bit salty , like corned brisket, but quite tasty and not spoiled,, Cheers Karen , I have a 3rd video coming up soon "COOKING WITH THE SALTED MEAT" Cheers and stay safe and happy.

      Hi , I had to leave for Australia so the cooking video was /Is delayed , I just soaked the pork for one day then boiled it, It was a bit salty, (like corned beef) but tasted good, It would be very good cooked with vegetables like cabbage and beans. I sliced it and used it as snacks as I worked, Very worthwhile cheers

      @@patrickhayes3099 Hi Patrick, the answer is No, the reason was the Covid Panic, I had to leave Thailand and the last flights were departing and I did not want to be stuck in a foreign land when the Plague to end all plagues, was about to unfold (well that's what we were all told) The rest is another story, Perhaps I should revisit those follow ups, thanks for prompting me mate.

      @@alabamaoutdoors4468 hey when i was a kid i was in the Boy scouts, their Motto was ...Be Prepared....and another saying I love is " preparation and practice prevents piss poor performance" ]with the salt method the only difficulty i foresee is that Bulk salt will be hard to come by, but it is cheap now ,and it lasts forever .and so many uses, stay safe mate.

      I live in Tennessee in the U.S. these are old country ways some of us still use today . I live off grid and do it. I don't have a refrigerator so meat preserving is key for us.
