    Chef Kunal meets Usha Tripathy, who talks about the Odisha cuisine and cooks Dalma.
    Dalma is a Chickpea Dal Cooked With Vegetables and Raw Papaya, a delicacy from the state of Orissa. It can be made using toor (arhar) dal, and an assortment of vegetables typically raw banana, eggplant, green papaya and pumpkins, simmered in a special spice blend.

    Dalma is tastier with moong dal than arhad dal. Moong dal cooked with pumpkin, eggplant, desi arbi and sweet potato and then served in plate made up off raw leaf of saal tree is just wow

    We assamese also use elephant apple extensively in our assamese cuisines we call it as " Ou tenga" For all it's tanginess

    Mere ghar pe Shri Krishna or Jagannath ji ko bhog charati hu which is made by me,various type of prasadam i can make like Karmabai Khichdi, Mohanbhog, Basanti pulao etc.etc... but i cannot make Dalma. Now I learn it how to make..so thank you very much 😊

    Red/ green chilli, potato are not used because none of those are local vegitables and fresh local vegitables are good for health. In our culture we use only local products in Puja.
