Dee, with organic chicken, there is very little fat in the skin. Hence, the skin gives it a lot of flavour when cooked. Trust me.
I like the way you burn down the little feathers on the chicken as even this gives the chicken more organic flavour. This is a very West African way of cleaning chicken as part of the second stage of cleaning.😅😅😊😊❤
