currried egg and aloo is not "strange" [0.48] you naughty boy ... you are the strange one for thinking it strange ....
The first time I saw curried egg and aloo was in the early / mid 1960's and the first time i tasted it was about 40 seconds after that ... mmmmm... mmmmmm ... curried egg and aloo bring back many memories for me ...
Your version probably not going to be close .. but hey ... what can we do with the youth of today ... teach them how to cook and suddenly they're changing everything ... and callin themselves "chefs" ...
Anyway ... lets find out what you've done to this dish ... [and find out what kind of potato you used] .. !
I had to pause it ... hehe ... If I got something else to say brother I'm going to say it ... trust me !!

LOL so it is very ancient Trini recipe. OMG my instructor was in her 50"s then I think. The cooking seen was not. Repeat not what it is now. She entered us her class in many cooking contests conducted amongst the many small islands. A select few of us. Of course. Whatever our specialties were. My point is if we talk too many older FOLKS they will tell you d basic stance on many recipes where they originated. Who brought them over too T & T Any who not a new recipe. When I made this many wanted to know way 8 got it from at 14 years young. Or course me can go on & on about countless recipes. Not enough time to tell those tricks. My teacher then Mrs. Rampersad took me under her wings. I traveled immensely. Along with all my coaching. From Grandma's. Grandpa's. Aunts. Uncles. Teachers. Listen & talk to our Dearest older heads. Them go school yuh correctly.

Do you know how many variety of potato exist ... and that they do not taste the same ?? ... you must do if you're a chef ... right ... !
Personally I would rather not cook my potato in the curry with eggs from fresh ... I would par boil them beforehand and save the water for the curry ... and white salad potato imparts a bitter flavour into the dish if you use them ....
and Garlic ... have you tried curried egg and aloo with roasted garlic ... it adds another level of flavour that will make you eatafood right up !
