    I'm glad to see you're continuing to experiment with that GT. What you've got there is basically a subsoiler. I think the problem is that the beam is 90deg to the ground when lowered. Subsoilers usually have the beam angled a bit forward (say 5-10 deg) when the implement is lowered.
    The cutting tip of the subsoiler is also angled about 30 deg forward. Causes it to be pulled down into the soil rather than lifted up (without needing weights or hydraulic downforce). I've seen youtube vids where guy's have welded or wired a short length of conduit to the trailing side of the vertical beam to guide the tubing down into the ground.
    You're absolutely right with your deduction that the cutter on your subsoiler is too wide. Bonus points for correctly using the technical term, "wowie". :D
