- Hi guys!
Since I was getting a lot of messages with questions, struggles and requests for the recipe, I decided to make a video for you guys with all the measurements, tips and tricks!
I tried different methods and measurements and find this method the easiest to use. About the 1:2 ratio, for example, if you have 70 gram egg whites you need 140 gram sugar of which 10 gram should be powdered sugar.
So your amounts should be:
70 gram egg whites, 130 gram sugar and 10 gram powdered sugar. If you have less or more egg whites just multiply it :).
Bake as usual at 75/80c (165-175F) OR to minimize breakage start at 65c (150F) for 30 minutes and then slowly turn the oven up to 75-80c (165-175F) and bake for another 30-60 minutes. This depends on the size of your meringue. The bigger the shape, the longer the baking time will be.

It will eventually melt! But it takes some time and depending on hot your drink is as well :)

So basically marshmallow fluff? And why doesn't the normal rule of thumb 3-egg whites for each 1/4 cup of sugar work? Weighting for baking is so absurd. Stick with tried and true methods for best taste and results!

After baking, store them in an airtight container at room temperature. Should stay good for 2 weeks :) wouldn’t recommend putting it in the fridge due to humidity

I've tried this recipe a few different times now but I just cant seem to get it to work😔 everytime I take the mixture of the heat, cool it then go to mix it no matter how long it just doesn't mix up right idk what I'm doing wrong 😞 I don't think the heats the problem but maybe idk. Ive tried four diff temps each getting lower
For me, this recipe didn’t work because the egg whites didn’t whip up right. Normally I add the sugar a teaspoon at a time while in mixing the egg whites (tedious I know) and it turns out perfect. The exact video I use is from Preppy Kitchen.
this is a slightly different meringue recipe but it worked for me! (I used it to make macarons though, so I don't know exactly if you can make cute shapes with it but I'll assume so and try it tomorrow anyways)
basically: 150g sugar, 50g water, 2 egg whites.
put the water and sugar into a saucepan and heat it up to 120 degrees C, to avoid the forming of crystals just keep the inside of the pan wet with a brush.
in the mean time whip up your egg whites and whilst the egg whites are being whipped you slowly pour in the sugar syrup you just made, keep whipping until it has cooled down.
It's part of a macaron recipe by poptasi c: hope it's worth something!

Can I make it without the electric beeter?
Do you have to cook these afterwards? Also mine always seem to be runny. I have hand mixed for about 30 minutes. Maybe I under heated mine. I will try heating it to 160°F next time.
Yes you need to bake them at 80c (175F) afterwards :) but be careful to not overheat your mixture in the beginning! (before you mix it) or else it won’t stiffen.
Your egg whites+sugar mixture should not be hotter than 40c/100F, the sugar should start to dissolve and your mixture becoming sticky and white. Let it cool and then start mixing. Hope this helps!

Maybe i under heated it. It only got to 108 or 115 degrees F. Maybe when I try again I will heat it to 160. That seems to be what other people are recommending.

Hi there! A few tips if your mixture stays/becomes runny!
1: make sure everything is totally grease free including the spoon/spatula your using
2: dont overheat your mixture. I recommend heating it to max. 40c/100F. Sugar should start to dissolve and your mixture should become stickier and white (important to keep stirring!) let it cool then start mixing. I mix mine about 10 minutes.
3: don’t add your vanilla extract too soon, add towards the end.
4: Better to use egg whites from eggs instead of a pack. For some reason I notice my meringue won’t set as much if I use eggwhites from a pack compared to using real eggs🤔
5: don’t use too much food coloring and preferably use gel food coloring. Also slowly mix this in, try to not beat out all the air.
6: Work fast! If you let your meringue sit at room temperature for too long it’ll slowly become runny by itself.
Soooo I hope this helps anybody who has had this issue😅💕

Ahh😕 try to set the oven slightly lower and mix at the end at low speed to remove large air bubbles. Also, what do you exactly mean with strong texture? The meringues should be crunchy😅

Ofcourse! They should look dry on the outside and when you peel them off (after letting them cool for a bit) they should peel off completely clean at the bottom and 1 even color. However, recommend to bake them atleast 50 minutes before checking/taking them out. If you take them out too soon they might collapse:(
@@amyskitchen4562 I had the same question! How do you know when to take them out though? Are you just looking for the shine of the wet meringue to be gone? Big difference in cook time between 60 and 90 minutes and I don't want to mess them up!
@@kirstinrice6259 the baking time varies because it depends on their size and shape :) if your meringues are quite flat or small I bake them about 60 min. and if they’re bigger I bake them longer just to make sure it’s set in the middle. Usually how I know when it’s done is when the shine of the meringues become fully matte (and atleast 45-50 minutes have past).

Thank you for the recipe! Those are soo cute! When I saw it on UA-cam I told myself that I need to make them, even though I'm not the huge fan of meringue to be honest. I tried and everything looked ok, till the moment I raised temperature after 30 min from 65C to 75C . They started "growing" and at he end only surface looks good. Bottom and inside stayed gummy and sticky :( Could someone tell me what I did wrong. I won't give up and for sure give it another try.

I made them! They're delicious. Thank you! My dad normally doesn't eat sweets, but he ate a bunch of the tiny ones! I made them in small swirlies, then I made some weenie dogs. I have one question though. When I took them out of the oven, they were crunchy outside, but sticky inside. Is that how its supposed to be?
Hi there! Oh glad you made them and your dad likes them!😍 they should be crunchy on the outside and slightly chewy on the inside. It shouldn’t be wet. If that’s the case bake them a little longer or let them sit for few hours before eating :)

Oh no! Make sure your bowl and spatula are totally grease free. Don’t overheat your egg whites, I usually aim max. 40c (105F) then take away from heat and keep stirring to bring back the temperature of your egg whites. When it’s cool then mix on medium-high speed. I usually mix for 10-15 minutes in total. Im also working on another recipe which might be easier to work it! Will try to post it soon😘

Hi! Does the amount of sugar matter? Cuz I dont wanna add too much sugar and it might affect the finish product?
Yes the ratio should be around 1:2 so if you have 70 gram egg whites use 130-140 gram sugar. You could add less sugar but the chances will be that your meringues will be less glossy and have a more ‘bubbly’ texture in my experience 😕

Before or after putting it in the oven? If you let them cool completely after putting them in the oven they should not be sticky🤔 maybe you need to bake them a bit longer😅

So... my oven starts at 100°c 😐 so that means I cant make meringues 😭😭😭

@@riddhiiyengar8304 I tried... but they still burned a little 🤦🏻♀️ and it got sticky 🤦🏻♀️
You could always get an oven thermometer and preheat your oven to 80 with that, and then turn it off when you put the meringues in, it will slowly cool but the meringues should setup. If you think it's getting too cool, take the meringues out and repeat the process... or, just preheat to 100 and turn off when you put the meringues in, because it's not a constant 100 due to it cooling down it shouldn't burn.
could you hand mix it?
mine is just too runny and i’ve tried twice. i made sure it wasn’t too hot
Did you mix it long enough? Takes about 8-10 minutes for mine to stiffen up😕 or skip the heating process and mix directly but not too high speed or else you will have too many large bubbles and then they’ll crack when baking

The mixing and making of your meringues about 30-45 min and the baking about an hour. That takes up the most time because it has to dry in the oven😅 temperature also can’t be set too high

I tried making these twice but I was never able to get it to fluff up. The first time I forget to add the powdered sugar on time lol, but the second time I fixed that mistake but still didn't work. I'm not sure what could have gone wrong. Help please! ☺

What kind of food coloring did you use? 😕 Best to use gel food coloring! Try not to use too much and gently fold it into your meringue.
@@amyskitchen4562 the Dr. Oetker ones and a bit of Tesco own brand one ( I was trying to make the colour brown) the colour hardly showed and the meringue melted 😥

what brand of food coloring do you use?
I feel like I have a good consistency in the mixer but then once I start piping it’s seems like they get “soggy” right away, they say down into little blobs. 😭 I tried making little bears and the ears and arms just blended into everything after a few seconds. What am I doing wrong? 😞
Ahh well sometimes still happens to me no worries! Could be either; you need to mix it longer (keep in mind you still need to add food coloring so you’ll mix out some of the air in your meringue). Or you used too much food coloring or used liquid food coloring. In both cases it will change the texture of your meringue. Use gel food coloring and try not to use too much. Hope it’ll help😅
