Emma, aren't you forgetting the so-called "zero article"? This is very peculiar when we compare English with other European languages and causes a lot of problems to elementary and even intermediate students. For example, in Spanish we say "Me encantan LAS series de Netflix", while in English we say "I love Netflix series", so there's no article here. The same happens in French, Italian, Portuguese and all the Romance languages in general.

I like this lesson so much, but there is one point I'm still confused about, that is the third rule section, with the example "I like eating cake". I've managed to figure out that the noun cake here is uncountable, but I also find it listed as countable in the Oxford dictionary. Therefore, in case it is countable, can I say I like eating cakes? Emma, As a native English speaker, we learn this by default and don't give it a second thought. I suspect most native English speakers couldn't even tell you what an article is, let alone know that there are rules about their use. A very interesting lesson that I never thought would be such a problem for non-native speakers.
She's really a hardworking tutor who prepares her video in an errorless manner then put that explanation in a document at the description , also assigned you some questions along with AnswerSheet to check yourself. Examples are a ball, a car, a dog and many more. If the word begins with a vowel, we use ‘an’ to help with pronouncing the word. Examples are an apple, an egg, an ice cube, an orange and an umbrella ☂️. The same is true for words such as an automatic gearbox, an easy task, an interesting question, an open door, an ugly picture and many more. There is one example that has two answers. It is the letter ‘h’ at the beginning of some words. A horse 🐎 is correct, but AN honourable person (the h is silent). I hope this is helpful for you.

The example you shared, " I saw a person yesterday......the person stood up when they saw a cat.....etc." is wonderful example. It clarifies many things in no time. Will see your video again.
Have a small doubt though not related to usage of article......: You wrote, "..... when THEY saw a cat" Is it not, "....when HE saw a cat? How did you for the word ' THEY'? By saying so you have implied that there were many people. Is it ok to write like that? Do you mind clarifying?

If I speak generally and want to leave "the" out of the sentence, which is the correct?
As what you mentioned, I can leave "the" out of a sentence if I use the plural form when I talk generally. Hence, it means that 1) is incorrect. Am I right?
I think the second sentence with cakes is the correct, because it is in general.

Hi Emma, thanks for making this great lesson, but I have a question for your example story @6:27, how did you use "they" at the "The person stood up when they saw a cat" ?
was it should be "he/she" ?, or because "The person" is the indefinite noun so we can use "they"?.

Hi Emma, saw your above video. Great explanation. Thank you. You have made the rules as simple as it could be. Brilliant! The example you shared, " I saw a person yesterday......the person stood up when they saw a cat.....etc." is wonderful example. It clarifies many things in no time. Will see your video again.
Have a small doubt though not related to usage of article......: You wrote, "..... when THEY saw a cat" Is it not, "....when HE saw a cat? How did you for the word ' THEY'? By saying so you have implied that there were many people. Is it ok to write like that? Do you mind clarifying?
