Glad i watched! I never knew the windshield was bolted on even though i have opened one up once or twice. I recently got to a weird point where i cared more about owning the cocoon then the actual vehicle itself. I decided to buy 3 of these bat mobiles. One pristine one is to put in the original retail box with the cocoon, missiles, toy instructions that make a complete set just for my own piece of mind. The second one condition is moderate, but it does not matter because im going to deconstruct and rebuild it using 3d printed parts like adding a canopy, bomb tires, machine guns, rocket flame, actual working lights etc etc and that one is for display. The third one i was going to leave untouched and just for playing around with and spare parts if needed however it met with an unfortunate accident and was destroyed by a subwoofer falling on it shattering it like glass and ill prob be finding pieces of it for years to come i had to laugh because the toy had made it decades unscathed but 2 days with me and it met its doom. I think i went a lil crazy with all this but in the words of Colonel John "Hannibal" Smith - I love it when a plan comes together.
If it is just for display purposes, you could try using some balsa wood. Easy to shape using a craft knife. You could make the canopy shape and just set it on top, or add a makeshift hinge if you were willing to make a couple of holes. Tricky part would be matching the black colour when you are painting. Worth googling to see what other people have come up with.

I want to make a custom door or roof for this Batmobile, do you have any idea how can I do it without using a 3D printer?

I made 1 using flexible plastic but will be using some craft foam when it gets in the mail.
