Pickling is such a diverse art. I've had sauerkraut that was pickled without vinegar because it was fermented on its own in aged barrels with only salt, it's own internal juices becoming the vinegar. That stuff was incredible. Best sauerkraut I ever had. I also regularly buy a number of pickled products from Mezzetta, including banana pepper rings and giardiniera vegetable mix.
Pickling stuff is one of my favorite hobbies. My friend made pickled watermelon spears once, and you wouldn't think that would taste good but MAN that was delicious.

As a guy from Belize I can confirm we do make pickled habanero sauces like that but they're typically just sliced habanero, onions, and vinegar. Typically used as a spicy topping for rice and beans and other local dishes, not eaten as a dish which I'm guessing is also the case for that Haitian sauce. haha
