    • @howtodrink
      @howtodrink  5 років тому +8

      Between us... I JUST shot a Pearl Diver, but it's got nothing to do with Django. That's a really fun anachronism in that movie, but the drink he orders wouldn't exist until the 40's/50's. I think it was done intentionally to show how elaborate Golden Age drinks were, and someday maybe I'll do a variation based on Django.

    Best tip I ever got on mint juleps was to discard the mint you've muddled before adding ice. Once crushed, mint will produce that minty oil that you can spread around the inside of the glass, but if the crushed mint sits in the drink too long, the alcohol will break it down and get chlorophyll into your drink, which is unpleasantly bitter.

    • @mr.angryman3599

      what does too long mean? 5 minutes?

    • @InfernalBanana
      @InfernalBanana 4 роки тому +5

      MR. ANGRYMAN It’s really more a matter of whether you just pressed the leaves with your muddler or if you crushed and ground them. You ideally just want to get the oils out without crushing the thing you’re muddling, and the chlorophyll gets released more because the mint was over muddled. Yes, the leaves will leech out some chlorophyll regardless, but I’ve had the occasional mojito and you can pretty much instantly tell if the mint was over muddled- it has a lingering bitter flavor, especially on the aftertaste.

      > You ideally just want to get the oils out without crushing the thing you’re muddling

    • @InfernalBanana
      @InfernalBanana 4 роки тому +2

      Drops2cents exactly. With mint, and I’ve also seen recipes that use muddled peppers like serranos or jalapeños, you just want to barely press them to get only the oils. Any crushing or grinding, and you’re gonna have a bad day.

    The phrase you’re looking for is “freezing point depression”. It takes a lower (much much lower) temp to freeze alcohol, so it will stay liquid below the freezing point of ice, keeping it from melting. Same reason why salt melts ice without providing additional heat

    Dilution is such a commonly overlooked feature it's pretty amazing. Ever since I've started mixing I've been adding splashes of chilled filtered water into almost all drinks because it skips the time it takes for the ice to melt and get the drink to that perfect concentration of alcohol/water. (Yes of course I mix my Martinis for at least 30s) but try it with a splash of water next time.

Sorry for the metric and imperial mash, but 500ml of Buillet and 125ml of simple syrup that I let sit with a tea cage full of 1/2 cup chopped fresh mint leaves and left in the fridge for two hours. I also kept poking at it and "basting" the tea bulb every so often during the process. This seems great chilled on its own or poured on the rocks or ever snow cone. ;)

      Well, I'd say it's essentially mint which is watered with bourbon - nothing wrong with that as long as the mint doesn't start to chant salty drinking songs. :-)

    I love watching your vids as ive been into mixing cocktails since i turned 21 I actually like to mix some cinnamon and apple whiskey in a glass with some heavy whipping cream shaken over ice with a dash of vanilla extract and a splash of nestle italian sweet cream creamer mixed in. Almost like an apple pie taste with some whip cream topping and some cinnamon on top

    I'm pretty keen on mint as a flavor (it is likely my favorite flavor) and summarily mint juleps which I happen to be enjoying now. I tend to go a lot lighter on the ice though, use powdered sugar when I muddle, and add a splash of soda water to get a bit of a nice fizz going as a personal preference, but now you've inspired me to try it in your way as well.

    Wow, I've only been using a couple mint leaves in mine. A few in the shaker (I use a shaker), and a few in the glass I pour it in. I'm going to have to try it your way. Must be a powerful flavor. Cheers.

    Thanks for a great spin on the original.
    Here's the excerpt from The Bartenders Guide by Jerry Thomas circa 1862. I spent YONKS making that cocktail guide easy to read with today's measures and language.
    The julep is peculiarly an American beverage, and the Southern states is more popular than any other. It was introduced into England by Captain Marryatt, where it is now quite a favorite. The gallant captain seems to have had a penchant for the nectareous drink, and published the recipe in his work on America. We give it in his own words: "I must descant a little upon the mint julep, as it is, with the thermometer at 100°, one of the most delightful and insinuating potations that ever was invented, and may be drunk with equal satisfaction when the thermometer is as low as 70°. There are many varieties, such as those composed of claret, Madeira, &c. ; but the ingredients of the real mint julep are as follows. I learned how to make them, and succeeded pretty well. Put into a tumbler abont a dozen sprigs of the tender shoots of mint, upon them put a spoonful of white sugar, and equal proportions of peach and common brandy, so as to fill it up one-third, or perhaps a little less. Then take rasped or pounded ice, and fill up the tumbler. Epicures rub the lips of the tumbler with a piece of fresh pineapple, and the tumbler itself is very often incrusted outside with stalactites of ice. As the ice melts, you drink. I once overheard two ladies talking in the next room to me, and one of them said, “Well, if I have a weakness for any one thing, it is for a mint julep!”-a very amiable weakness, and proving her good sense and good taste. They are, in fact, like the American ladies, irresistible."
