It’s the dish that the old lady bought out after Hamish finished the “level 15” one. It’s usually deep fried with some pickled cabbage. You can also get it in a soup with other ingredients which is again very palatable even for a foreigner :)

Interestingly, fermented ancient tofu is basically how soy sauce is made, and that stuff is gods own food. Oh, and age soy source like wine. Throw some in the cellar and forget about it for ten years, trust me it will be amazing afterwards. The japanese have soy sauces that are 100+ years old and are apparently amazing.
