I'm Bavarian, we would cook the entire potatoes and then peel and slice, but I will surely try this method, also the roasting of all ingredients in a pan. Thank you!
Both look delicious. I have to eat potato salad at room temp…no biting into cold potatoes for me. I also love a lil buttermilk and fresh dill….room temp of course.
Sorry, guy. Here in germany we just peel the cooked potatoes. How you made it we do it for"Bratkartoffeln"roasted potatoes. After cooking and peeling the potatoes,we slice them and make a marinade ,first step roast the "Speck" and the onions softly ,than some mustard and a little beefbroth, some picklewater, salt and pepper ,cool down a little bit and put it over the warm potatoes, mix well and some fresh chopped parsley.Ready. So good luck and take care.Gretings from cologne germany.P.S: this recipe is a classic bavarian style. Here in cologne we like to use mayonaise.Beye....
I really like your German potato salad. The only thing I do different is add sugar when adding the vinegar. Obviously I don’t get crazy with it. The sugar makes something like a glaze but not enough sugar to make it too sweet. Really appreciate you and your videos. I learn something every time. Thanks!
My German grandma was vegetarian and made her German Potato Salad with cucumbers and served it cold with red wine vinegar and olive oil (instead of bacon) and it was incredible!
There was a lady that we went to church with and she was from Germany ,I remember her making some German potatoes salad and it was so good ! I never could make German potatoes salad like her.
They both look amazing! I would eat both all day long ☺️ Can you please share the info on the pot with the basket you used to boil the potatoes? I’ve never seen one like that. I would like to buy one.
After my potatoes are done, I drain them in a colander, then put them back in the pot and back on the stove to dry them (just like when you’re make in mashed potatoes) …While they’re drying for a few seconds, I sprinkle malt vinegar on them and stir. The potatoes suck the vinegar in. I cool them on a cookie sheet while I chop up the rest of the ingredients. The only other deviation from your recipe is that I add crumbled bacon and more sugar to balance the vinegar.
We have a family recipe for potato salad, using new potatoes (boil in their skins, then dice when cooled), a good (home made!) vinaigrette, some chopped spring onions or scallions, and a good handful of chopped herbs including parley and mint. It’s a good alternative to a Mayo based dressing.
I made this today for a Labor Day group meal and it turned out great! I haven’t made potato salad in a very long time. This recipe was pretty easy. I do not make homemade pickles but used Bubbie’s bread and butter pickles. Thank you for sharing this recipe. I’m definitely going to make it again!!
I’m an expat overseas and going to be home with my family for the Fourth of July. I am definitely making the Southern style version for the cookout!!! 🥔🍔🌭
I love both recipes I make my southern potato salad the same as you but with the sweet pickle relish. And I enjoy amd love the German Potato Salad. My girlfriend is German and she taught me . Everyone loved both. I made both and won 1st Plcace. Kuddos for me...😍🥰
Just finished making your German Potato Salad, followed your procedure as you stated, it is excellent!!! Really liked your addition of beef broth after roasting the potatoes & onions into hot bacon grease, Delicious! Thanks for taking the time and posting this video! Cheers !😋Subscribed
I am Australian and love potato salad. Usually it is done here with bacon, onion, mayo and (sometimes) sliced boiled egg on top. HOWEVER, I had two short business trips to Vienna where they do the South German (Schwabian) potato salad, similar to the one you did. I was in heaven. Over the years I have tried to reconstruct this, and now youtube is my friend! Whilst we don't do American style crispy bacon, I am going to try your version with "normal" bacon. Thanks Chef Billy!
Both look totally delicious. There are so many potato salads made that just don’t taste right. It’s a shame, because it’s hard to beat a good potato salad. Thank you for sharing your recipes. The Southern Potato Salad looks perfect!!
If you start your potatoes in cold water, you won't need the ice bath afterwards. Putting them in boiling water cooks the outside too fast, making it mushy before the inside cooks. Add your vinegar while the potatoes are hot. It will absorb better.
I have never cared for American potato salad of any variety, Southern or Northern, period. The turn-off is, I suspect, the boiled potatoes. On the other hand, I first tasted den Schwäbischen Erdäpfelsalat (South Germans and Austrians use Erdapfel for "potato," those North and Central Germans use Kartoffel for "potato") around 1974 when I was a teen and a German lady, member of my Catholic parish in north Florida, had made it for a special supper at the parish social hall. That salad was downright upright!
Everything looks so delicious going to try that German potato salad I have all the ingredients lol tfs love your recipes and channel. Prepap is the best way to get it done .trying desperately to install it in to my son in laws head..!!!!
Made the German style today with red potatoes, So tasty, I've had it both hot and cold years ago while living in Germany. Having a taste now hot but wonder if the next day those flavors will be more pronounced.
I always boil whole with the skins on and peal the potatoes when there hot with a knife . I don't like mushy feel and the water in the potatoes . Lite and fluffy not water logged mush .
I made a mountain of this southern recipe for a bbq today (added dill, olives and capers, just cuz I had some), and not speck was leftover! It was a hit! Thanks!
Personal choice, your opinion doesn’t make it right and saying your family would throw it out is disgraceful. In a world where millions are starving. Shame on you.
I think the salads would look more appetizing if you removed the eyes from the potatoes. Interesting to see two different versions of potato salad neither of which is like the English one. Thank you for the video.
Nice recipes-enjoyed the video. FYI, whatever title layer you’re using has some weird LUT attached to it that’s washing out the image when the title is on-screen.
I lived in Germany for 20 years and never saw that stuff anywhere. Nowhere. If it is not creamy white, with tons of mayo and gherkins, then it is simply not potato salad.
I think the only thing I would do different is add the dressing to the mash mix then the little bits mix and then the big pieces of potatoes then fold.
I do 1 cup of water, 1/2 cup of vinegar, 1/4 cup of sugar, add bacon/drippings and onions which were cooked in the bacon drippings. Bring to boil add a couple tablespoons of flour to thicken then pour over potatoes and salt to taste.
I suppose there is no wrong or right way to make potato salad but to mash the potatoes put egg in it pickle and all that just no go for me. In England we normally make a potato salad with small new potatoes onion sugar vinegar mayonnaise onion granules and herbs
Of course there are many different recipes for german potato salad, but no german will ever fry the potatoes or leave the peel on. This is no salad at all. Other than that: Great video, as always!
Damn I just realised you look like actor Ray Romano (from movie "the big sick"). So much so that I got so confused that I opened Google image of him from movie and realised you look alike alot. (I'm new on this channel)
Can you please advise what size pot you used to cook the german potatoes and where the potato basket with the handle could be purchased? I tried to find the basket for the potatoes on amazon, could not locate it?! Thanks!
Where is this German one from? The one my mom from Germany makes is never anything fried in it, raw onions, boiled potatoes, an egg or two on top of the warm potatoes with some herbs and spices and vinegar mixed in to make a nice potato salad sauce.
• • • This is not potato salad (Kartoffelsalat) These are Bratkartoffeln / Pan Fried Potatoes. There is are two diferent other recepies that are Potato Salad: One with Mustart and Mayonaise and one with vinegar and oil • • •
I'm all in for the German, the way Grandmother made it, and the way I make it. Serve it warm, then cold for the next day lunch! YUM!
I'm Bavarian, we would cook the entire potatoes and then peel and slice, but I will surely try this method, also the roasting of all ingredients in a pan. Thank you!
@@Stoffmonster467 pre-boiling them is always nice because it saves time on peeling

Love that German potato salad with vinegar...yum.
wow! i just made the southern potatoe salad, and it is deeeelicious!!! thank you!!! ❤

German style any day! Very very delicious
Gotta have the celery crunch in potato salad! Looks perfect 👌 🤜🤛
My German grandma was vegetarian and made her German Potato Salad with cucumbers and served it cold with red wine vinegar and olive oil (instead of bacon) and it was incredible!
Potato salads are my love language, both of those. Thanks chef.
There was a lady that we went to church with and she was from Germany ,I remember her making some German potatoes salad and it was so good ! I never could make German potatoes salad like her.

Can you please share the info on the pot with the basket you used to boil the potatoes? I’ve never seen one like that. I would like to buy one.
Both takes look delish and of course make potato salad interesting for once.
Exactly how my grandma made German potato salad!
After my potatoes are done, I drain them in a colander, then put them back in the pot and back on the stove to dry them (just like when you’re make in mashed potatoes) …While they’re drying for a few seconds, I sprinkle malt vinegar on them and stir. Very appetizing salad! You're great chef!
My dad loved German potato salad I am going to make this next family dinner my mom will love this
I’ve come to love adding horse radish to my cold potato salad....adds a lot of zing!
I’m originally from PA , we ate potato salad both ways and cole slaws too ! I miss those sort of dishes 🥘 😌😋
Tasty and delicious this recipe! Thank you for sharing your special recipe
The perfect German housewife would add marinate from the pickles glas into the potato salad to round the flavour.
I’m an expat overseas and going to be home with my family for the Fourth of July. I am definitely making the Southern style version for the cookout!!! 🥔🍔🌭
Hello Chef Billy,
I am a new subscriber to your channel. I am loving your classic from-scratch homemade style cuisines. TQ
Love that potato German salad 😋

Ha!!! ELEVENTY BILLION !! I thought I was the only one who used that expression!! Thank you for the recipes!!

I cook my potatoes whole with skin on. Cool, then peel and cut in 3/4” pieces. They are never mushy, Not changing. Thank you anyway. 😉👍🏼
You do it right. I know it, because I'm from Bavaria.
Looks wonderful!
Great recepies, thanks!
Can't wait to make these! I had not heard of potatoes in the ice bath before. Very cool.
One of my favourite’s just the best. No creamy dressing
I have never cared for American potato salad of any variety, Southern or Northern, period. The turn-off is, I suspect, the boiled potatoes. It’s taste great but I suggest whisking all the ingredients together before adding the potatoes just blends better.
Good Lord : you have obviously never been to Germany or Austria , none of us would EVER make our potato salad like this.
Can't wait to try these. Was expecting some sweetner, though, in the German salad, to balance the vinegar, no?
Chef, do you have a cookbook? Love your channel!
Made the German style today with red potatoes, So tasty, I've had it both hot and cold years ago while living in Germany. Having a taste now hot but wonder if the next day those flavors will be more pronounced.
I prefer NO EGGS, NO MUSTARD. I do like in addition to chopped celery, chopped red bell pepper.
I’m going to make a mayonnaise/mustard/horseradish paste and add to this. I’ll Letcha know...
Perfect Southern Style
I always boil whole with the skins on and peal the potatoes when there hot with a knife . I don't like mushy feel and the water in the potatoes . Lite and fluffy not water logged mush .
I have taken great notes. I am trying both.
I made a mountain of this southern recipe for a bbq today (added dill, olives and capers, just cuz I had some), and not speck was leftover! It was a hit! Thanks!
WOW,makes my mouth watering,i love it,
Wow!
Looks delicious.🍃
Nice. Thanks for posting.
Can't wait to try both of these recipes 😋😋😋
Delicious. Now let’s do slaw
Hot potatoes absorb the flavors of the dressing.
(:
None of my southern family and/or friends add bread and butter pickles to their potato salad. Quick way to be thrown out of the family.
The right and only potatoe salad recipe is a religious topic 😉
i HATE bread and butter pickles
Personal choice, your opinion doesn’t make it right and saying your family would throw it out is disgraceful. In a world where millions are starving. Shame on you.
@@valeriebrown4769 He didn't say the potato salad would be thrown out, he's saying the person who brought it would be
You just made Bratkartoffeln and let it cool. I've never seen someone making a potatoe salad with the skin on. But the kind with the vingar is nice.
I never peel potatoes for anything lol. Not even for mashed. The skins are good for you, so waste time and food?
@@lisabishop6266 hahaha! Yeah sometimes i'm too lazy and won't peel them either.
If you use russets for the German style, should they be peeled first?
I think the salads would look more appetizing if you removed the eyes from the potatoes. Interesting to see two different versions of potato salad neither of which is like the English one. Thank you for the video.
Where did you get that great pan and strainer?
Loved watching my dog play muffin tin game
Nice recipes-enjoyed the video. FYI, whatever title layer you’re using has some weird LUT attached to it that’s washing out the image when the title is on-screen.
Thanks chef❤️🙏
Nice homemade salad I Food Leveling
"Fancy egg slicers"? Those things were invented in the early 1900s.
Where is that pot from I like it I need one
I do 1 cup of water, 1/2 cup of vinegar, 1/4 cup of sugar, add bacon/drippings and onions which were cooked in the bacon drippings. Bring to boil add a couple tablespoons of flour to thicken then pour over potatoes and salt to taste.
The southern version is what i call " home fries" not potato salad😂
I suppose there is no wrong or right way to make potato salad but to mash the potatoes put egg in it pickle and all that just no go for me. In England we normally make a potato salad with small new potatoes onion sugar vinegar mayonnaise onion granules and herbs
I also add Dijon mustard to the non-mayonnaise version and skip the bacon. Thanks.
Of course there are many different recipes for german potato salad, but no german will ever fry the potatoes or leave the peel on. This is no salad at all.
Other than that: Great video, as always!

Hi!What watch are u wearing looks nice
I'll take a little of each please!
Anyone recognize the strainer basket with handle he uses to boil then drain the taters? I asked on his kitchen gear website but got no answer.
Your southern version is almost exactly like my grandmothers except she used slightly more mayo with a tad of cider vinegar.
Well I am from germany but I have never seen someone here doing potatoe salad like this... This is very uncommon
I use a grater for my eggs
I used to make 50 lb for our club picnic, I just peeled them and used my hands to break them up. 10 dz eggs it would be too much work.
The pot with the strainer
Aawwhhh that's not the way my great grandmother taught me NO ice water
Where is this German one from? The one my mom from Germany makes is never anything fried in it, raw onions, boiled potatoes, an egg or two on top of the warm potatoes with some herbs and spices and vinegar mixed in to make a nice potato salad sauce.
He made "Bratkartoffeln". It's a popular dish in Germany, but not a potato salad, it's different :D
Love!!!!
That's more of a fry potato salad than it is an ordinary potato salad.
Thank,s and happy gooday

German potato salad is my favorite (because mayo is evil). Can't stand mayo in anything.
German? South or north? North is with mayo. South vinaigrette sometimes with stock
There is about as many ways to make potato salad as there are to make kimchi
In germany basicly every family has its own 😂😂
never knew you americans don't have speck dices ready to buy.
