- Potato salad is a delicious side dish consisting of cooked potatoes, vegetables, and a dressing. No matter where you are in the world, every country has its own version of potato salad and even then, there are several variations of that specific rendition. Potato salad in America is most associated with the South which is mayonnaise and mustard-based.
Southern-Style potato salad has some discrepancies as well. To add sugar or not, to use relish or not, what potato should be used. My professional recommendation is to make and eat it the way you and your family enjoy it the most. With that being said, if you want the real deal, then this is it.
German potato salad, better known as Schwabischer Kartoffelsalat in Germany, is a vinegar-based salad consisting of cooked potatoes, onions, and crisp bacon. This tasty side dish can be served hot or cold, and both ways are delicious.
Classically German speck, which is their version of cured bacon, would be used but thick-cut bacon is most commonly used here in the United States. In addition, there are several traditional recipes that do not use any meat at all, instead, they would serve this up alongside a schnitzel.
Southern Potato Salad Recipe:
• 3 pounds peeled and thinly sliced russet potatoes
• ½ peeled small diced red onion
• 2 medium diced celery stalks
• ½ cup finely minced bread and butter pickles
• 6 small diced hard-boiled eggs
• 3/4 cup mayonnaise
• 2 tablespoons yellow mustard
• 2 teaspoons sugar
• ½ teaspoon paprika
• salt and pepper to taste
Serves 12
Prep time: 20 minutes
Cook time: 6 minutes
Procedures:
1. Add the potatoes to a large pot of boiling salted water and cook for 6 minutes or just until tender.
2. Immediately remove them from the boiling water and transfer them to a large bowl of ice water to chill them quickly.
3. Once cool, strain them and set them aside.
4. Take about 1/3 to ½ of the potatoes, add them to a large bowl, and roughly mash them using a hand masher.
5. Add the remaining potatoes along with the rest of the ingredients and using a rubber spatula fold everything together until it is very well combined.
6. Garnish with optional extra paprika and thinly sliced green onions and serve.
Make-Ahead: You can make this up to 1 day ahead of time. In addition, it would be best not to dress the potato salad until ready to serve.
How to Store: Cover and keep cool in the refrigerator for up to 4 days. This recipe will not freeze well.
The potatoes should be peeled and cut before boiling them.
Feel free to add or subtract the amount of mustard or mayonnaise to your liking.
Yukon gold, red bliss, or russet potatoes will work great for this recipe.
You can absolutely make this without celery.
If you do not have a red onion, a yellow, sweet, or white onion will do.
Use my hard-boiled egg recipe for perfect results.
My bread and butter pickle recipe makes for an excellent relish
The boiling water should be as salty as the ocean.
German Potato Salad Recipe:
• 3 pounds of sliced Yukon gold potatoes, about ¾” thick
• 1 peeled and medium diced yellow onion
• 6 thinly sliced strips thick-cut bacon
• ¾ cup beef stock
• 1/3 cup white wine vinegar
• 2 tablespoons finely minced fresh parsley
• salt and pepper to taste
Serves 12
Prep time: 10 minutes
Cook time: 20 minutes
Procedures:
1. Add the potatoes to a large pot of boiling salted water and cook for 4 minutes or just until tender.
2. Remove them from the water and strain them in a colander and hold them there until ready to use.
3. Next, add the bacon to a large frying pan or shallow rondeau pot over medium-high heat and cook for 4-6 minutes or until crisp and browned. Set the bacon aside.
4. Turn the heat to high and add in the strained potatoes and onions and cook for 4-6 minutes or until lightly browned. Stir every minute using a spoon or spatula.
5. Pour in the beef stock, vinegar, ¾ crisp bacon, salt, pepper, and parsley and mix until combined.
6. Serve with remaining ¼ of the crisp cooked bacon and additional chopped parsley.
Chef Notes:
Make-Ahead: You can make this recipe up to 1 day ahead of time.
How to Reheat: Place the desired amount in a small pan or pot and heat over low heat until warm. You can also heat in the microwave until warm.
How to Store: Cover and place in the refrigerator for up to 4 days. You can freeze this recipe, although you will lose moisture and flavor, for up to 3 months, covered.
This potato salad will actually taste better the next day after to infuse the flavors while in the refrigerator.
German potato salad can be served hot or cold.
This dish will go well with Pork, Sausage, Schnitzels, or at your next backyard BBQ get-together.
You can substitute the Yukon potatoes for russet or red bliss potatoes.
Feel free to substitute the beef stock for vegetable stock.
Make sure the strained potatoes have little to no water on them before frying in the bacon fat. - Навчання та стиль

I'm Bavarian, we would cook the entire potatoes and then peel and slice, but I will surely try this method, also the roasting of all ingredients in a pan. Thank you!

I really like your German potato salad. The only thing I do different is add sugar when adding the vinegar. Obviously I don’t get crazy with it. The sugar makes something like a glaze but not enough sugar to make it too sweet. Really appreciate you and your videos. I learn something every time. Thanks!

I made this today for a Labor Day group meal and it turned out great! I haven’t made potato salad in a very long time. This recipe was pretty easy. I do not make homemade pickles but used Bubbie’s bread and butter pickles. Thank you for sharing this recipe. I’m definitely going to make it again!!
Sorry,guy.Here in germany we just peel the cooked potatoes.How you made it we do it for"Bratkartoffeln"roasted potatoes.After cooking and peeling the potatoes,we slice them and make a marinade ,first step roast the "Speck" and the onions softly ,than some mustard and a little beefbroth,some picklewater,salt and pepper ,cool down a little bit and put it over the warm potatoes,mix well and some fresh chopped parsley.Ready. After my potatoes are done, I drain them in a colander, then put them back in the pot and back on the stove to dry them (just like when you’re make in mashed potatoes) …While they’re drying for a few seconds, I sprinkle malt vinegar on them and stir. The potatoes suck the vinegar in. I cool them on a cookie sheet while I chop up the rest of the ingredients. The only other deviation from your recipe is that I add crumbled bacon and more sugar to balance the vinegar.

My German grandma was vegetarian and made her German Potato Salad with cucumbers and served it cold with red wine vinegar and olive oil (instead of bacon) and it was incredible!

We have a family recipe for potato salad, using new potatoes (boil in their skins, then dice when cooled), a good (home made!) vinaigrette, some chopped spring onions or scallions, and a good handful of chopped herbs including parley and mint. It’s a good alternative to a Mayo based dressing.

I cook my potatoes whole with skin on. Cool, then peel and cut in 3/4” pieces. They are never mushy, Not changing. Thank you anyway. 😉👍🏼

I have never cared for American potato salad of any variety, Southern or Northern, period. The turn-off is, I suspect, the boiled potatoes. On the other hand, I first tasted den Schwäbischen Erdäpfelsalat (South Germans and Austrians use Erdapfel for "potato," those North and Central Germans use Kartoffel for "potato") around 1974 when I was a teen and a German lady, member of my Catholic parish in north Florida, had made it for a special supper at the parish social hall. That salad was downright upright!
I am Australian and love potato salad. Usually it is done here with bacon, onion, mayo and (sometimes) sliced boiled egg on top.
HOWEVER, I had two short business trips to Vienna where they do the South German (Schwabian) potato salad, similar to the one you did. I was in heaven.
Over the years I have tried to reconstruct this, and now youtube is my friend! Whilst we don't do American style crispy bacon, I am going to try your version with "normal" bacon.

I do 1 cup of water, 1/2 cup of vinegar, 1/4 cup of sugar, add bacon/drippings and onions which were cooked in the bacon drippings. Bring to boil add a couple tablespoons of flour to thicken then pour over potatoes and salt to taste.

You just made Bratkartoffeln and let it cool. I've never seen someone making a potatoe salad with the skin on. But the kind with the vingar is nice.
I never peel potatoes for anything lol. Not even for mashed. The skins are good for you, so waste time and food?

Nice homemade salad I Food Leveling
I always boil whole with the skins on and peal the potatoes when there hot with a knife . I don't like mushy feel and the water in the potatoes . Lite and fluffy not water logged mush .
Anyone recognize the strainer basket with handle he uses to boil then drain the taters? I asked on his kitchen gear website but got no answer.

I think the only thing I would do different is add the dressing to the mash mix then the little bits mix and then the big pieces of potatoes then fold.

Your southern version is almost exactly like my grandmothers except she used slightly more mayo with a tad of cider vinegar.

Of course there are many different recipes for german potato salad, but no german will ever fry the potatoes or leave the peel on. This is no salad at all.

I lived in Germany for 20 years and never saw that stuff anywhere. Nowhere. If it is not creamy white, with tons of mayo and gherkins, then it is simply not potato salad.
I prefer NO EGGS, NO MUSTARD. I do like in addition to chopped celery, chopped red bell pepper.
German potato salad is my favorite (because mayo is evil). Can't stand mayo in anything.

I suppose there is no wrong or right way to make potato salad but to mash the potatoes put egg in it pickle and all that just no go for me. In England we normally make a potato salad with small new potatoes onion sugar vinegar mayonnaise onion granules and herbs

Where is this German one from? The one my mom from Germany makes is never anything fried in it, raw onions, boiled potatoes, an egg or two on top of the warm potatoes with some herbs and spices and vinegar mixed in to make a nice potato salad sauce.

I used to make 50 lb for our club picnic, I just peeled them and used my hands to break them up. 10 dz eggs it would be too much work.
