i had ramen in kyoto pon tocho alley in a tiny spot called original kyoto ramen, i got the vegetarian like shinto monk ramen and it blew my mind, all of the different beans and vegetables, so good

Hi Frank! I have a question for you - I’m visiting Japan in a month and I’ve never tried ramen before because I get migraines from msg. I’ve noticed that I really only get them from things like fast food chicken and Chinese takeout. I eat things like sushi and soy sauce without much of an issue. Does much of the ramen made in Japan use artificial msg, or is it mostly naturally occurring? I feel like I only get headaches from the powder stuff. Thanks!!

I know some advertise that they don't use MSG or unnatural ingredients. I went to Menya Yoshi today in Taito City and it's run by hearing impaired. They advertise that they don't use MSG and they were very delicious! Even more delicious was Homemade Ramen Muginae in Shinagawa, Tokyo and I believe they also advertise no MSG or unnatural ingredients. Was there last week and they were awesome! I think most of your really good shops don't add MSG, tbh. I highly suggest Iruca as well. Has been my favorite this week of the 21 shops I went to.

Hello hello! Unfortunately in Japan ramen shops often use MSG, even the powdered variety. But some places (like Muginae, Gottsu, Shibasakitei, and Kissui Hananoren in Tokyo) will make it a point to only use chemical free seasoning. Hope this helps!
