harish sir small chicken is tender usually used more in tandoori and biryani the vendors sell more small chicken top restaurants and the bigger chicken is sold to regular buyers by the supplier small chicken breaks down faster and due to less development of protein structure its more softer or tender

Next when you visit Mumbai do visit Gomantak at Dadar for authentic Maharashtrian dishes.
Bali ji mutton takes more time to get cooked then chicken ... but in both the cases while its dum Biryani or its tandoori mutton in both the cases mutton is more soft juicy n tender bcoz of its fat content... while cooking tandoori mutton Barra mutton is kept to be tender by applying raw Pappaiya or pineapple juice or a spice called kachri... that makes mutton more tender n juicy... 😬👍🏻

Neer Dosa is a popular dish in coastal part of Karnataka. As far as I know, it's normally eaten with chicken curry.
Also sir, I've noticed many people in the North pronounce Dosa as Dough-sa which is a wrong pronunciation. It's दो-sa. Sorry in advance if I have come across as pedantic.

I was a little busy intermittently, hence could not view your Indore Special but will surely make amends once i view all those videos of Indore.
First of all, congratulations to you on your high resolution videos, you've made the perfect investment as is evident by the wonderful viewing of the magnificently illuminated CSTM or the erstwhile VT station.
Talking about food & here i am referring to the non-veg part that you have covered:
You have hit the nail on the head my friend, by choosing the right & the perfect restaurants for Biryani, the likes of " Persian Durbar" & the "Delhi Durbar," because the art of making a perfect biryani that is a mughlai dish has been mastered by the Muslim chefs & have been carried forward through several generations. Your depiction of the Biryani & the sincerity with which you explained the whole experience is quite noteworthy & should win you many plaudits. Many of such mughlai & predominantly Muslim restaurants are spread all over Mumbai & you can make it a point to visit most of these & narrate the salient features/differences of the Biryani making. To name a few, "Jaffers Delhi Durbar" ( At least 7/8 branches, may be more), "Arfa" ( , S V Rd, Jogeshwari), "Shalimar" ( Null Bazar)," Borivali Biryani Center" ( 4 Branches ), You can also fathom the latest, " The Bohri Kitchen " experience which is also a kind of it's own.
Your presentation of the ubiquitous " Fish " of Mumbai is also very hearty & innocent. The "Mumbai fish preps & types" is highly nuanced & one can literally go on an endless voyage trying to explore & explain . There are at least four different yet major Fish culinary types, "The Mangalorian ( Shetty's), The Malvani Preps, The GSB Preps, The Pathare Prabhu/ CKP Prep, each has it's own flavors & favorites.
From a North Indian point of view you have been able to explain the whole gamut of " Fish preps" absolutely perfectly & you were right in comparing the dissimilarities between the " Amritsari " & the " Konkan " types. Should you look for "Amritsari " preps in Mumbai, yes, you'll find them surely in the "Sion Koliwada" belt which in itself is a phenomena.
Every single time i watch your videos Harish, ( that i look forward to always) i find a remarkable sense of honesty & sincerity about the whole thing. Just keep it up !

Sir Kokum mostly find in costal area in Maharashtra and Goa. As north indians use tamarind, we use Kokum. Its a juicy fruit. The juice you saw in this video is the Kokum juice.
You say, you eat non veg less but, in most of the videos I see you eating non veg the most🤔
that was average till aug but not now... as every 3rd or 4th comment says cover non veg food... so avg was less now RR - run rate has increased

Being a Delhiite, when I first tried neer dosa with chicken curry, I instantly became a fan of it.
Now whenever I'll go to Mumbai, I'll have neer dosa with every gravy dish.
Another point to be noted, that prawns are high on cholesterol. Having once, twice or thrice in 40-45 days is OK, but it should not be eaten on a regular basis.

I would not agree on that, as Harish ji says what he precisely feels about the food. Its not just about saying food is good or not. You need to go into the crux to describe why the food tastes good or not so good, which he does, and thats his style which makes the videos not just good but gives knowledge about the food as well.
Harish ji, you were a beginner then in early 2018.
After touring Nawabi capitals Hyderabad and Lucknow, you are now a professional in reviewing Non Veg :-)

Hello harish ji, I just finished MP series that was awesome and pretty much fast video. But now in maharashtra episodes I have seen that it's little bit slow otherwise explanation was superb.

You are absolutely correct. Fresh fish does not smell like fish. The same can be said for fresh shrimp. Properly cooked shrimp should be moist. Shrimp is slightly sweeter in taste than fish or chicken. It does have more texture than fish, and you are right, it is less chewy than chicken. Rubbery shrimp, meaning very chewy, is a sign that it has been cooked too long.

Great review again Harish bai! Its nice to know that you are open to trying new types of food as i remember at the start of the video you said that you will only try fish and no other seafood, but u decided to try prawns as well.Thats a good quality for a food critique. I eat lots of seafood and from my experience good prawns are those that 1)do not smell fishy 2) have a nice bite to them and flesh should not be powdery or easily disintegrated 3)they should be cleaned well,back of prawn should be cut to remove the dirt which is in the prawn. Overall great video bai and looking forward to your next episode.Hope to see you trying more new things.Where Non-Veg is concerned u may also wish to try the food at Jai Jawan at Linking Road.They are very famous for their fried prawns and tandoori chicken.

Ponphret and lep both are juicy. U tried tandoor style in pomphret so it seemed juicy, any fish which is deep fried will not stay juicy, to keep it juicy while being deep fried, coating in form of besan or rawa is used in some style, further to add the best fish is kingfish called surmai also, filwoed by pomphret and bombil, nombil has no taste of its own but the way it’s flesh melts in mouth is extremely enjoyable and any qty falls short, Surmai on the other hand has to be chewed and a thick slice fried on high flame is awesome and nothing will come close to, when it comes to food,, another sea food is a female big wristful size of crab,, try this
