You can peel all veggies and wash them as a whole after this dry wipe with cotton cloth. Now cut them and place in tray in room temperature for one day after this you can make this recipe, no need to put for dry after adding salt and haldi . I’m always making this in this way and It works well. I’m also living in Canada,so guy’s no need to wait for summer 😊
