"Really big" is more prone to failure than small and frequent. Likely starting higher in the landscape, and planting trees where the slope is too steep for conventional catchments will slow and spread water.
    Robust is always good.
You need to ultimately slow water to prevent erosive forces.
Brad lancaster had good diagrams in his latest editions on rainwater harvesting.

    Well done.
Sometimes the Beehive State overlooks the faster, cheaper and easier model and goes for concrete.
Brad Lancaster, Watershed Mgmt Group and Borderlands Restoration out of Baja AZ are great resources too.
    Good luck.

Brad Lancaster is fabulous. Got his books. His advice is seriously good.

Would you now plant trees or larger bushes on the edges of those pools?

Trees are especially good at preventing problematic erosion, though other plants as part of the dam structure itself is good.

for the one rock dams they have to be built in a concave to keep the water chanel in the middle, instead of out and around the structure.

You mean to prevent erosion at the sides? One needs to ultimately slow water. He may also need to add more one rock dams in between as well.
