Thank you for making a video about this! Much easier to comprehend than the user manual. I do not know why some people would think that the laser is essential in the process because there are models where you can switch off the laser and still be able to take measurements. : ) I am not sure about your example of an oval measuring area vs circle: I think that the device just measures the average temp in the area, be it an oval or a circle. So if the oval is entirely on the surface of the chocolate then I think it will be as accurate as a circle. That is why the user manuals only say that you need to hold the device close enough to the target and they do not mention that it should be perpendicular. No? Please correct me if I am wrong...

The main issue is theory vs reality. Yes, in theory you could keep that oval in the chocolate but the reality is that the oval gets really long quickly and it is really easy to have it expand to the area outside and without being able to see it, you simply don't know. And you are right, many manuals don't say it and you also note they are not really great.

You need a calibrated thermometer and price isn't a good indicator there.
