I respect how he spent all the time and effort into editing the cat instead of dying it yellow. Plus, I remember watching this video as a younger child.

***** Pika= Light, Mouse= Chu chu, so Pikachu is Light Mouse. ~IMO
Pika does mean SPARKLE, which can imply light, or more specifically the flicker produced by arcing electricity. But "Chu" and the derivative "chu chu" does not mean mouse. The Japanese words for mouse are nezumi, or mausu. "Chu" is an onomatopoeia for either the sound of kissing or the squeak produced by small rodents, which YES can apply to mice, but also any number of rodents, and thus ANY rodent where the actual sound made is not commonly known.
As I pointed out in another comments, it's likely that Pika was chosen for it's pun value, and then chu was chosen for it's cute appeal and association with small rodents. And then misinterpreted when brought to the US by people who speak the language, but are culturally inept.
It's adorable... Let's leave it at that boys and girls...

I feel bad for the kitty that was dyed that color. :'( Must have been stressful... The video is great and all but I still feel bad.
If you watched the behind the scenes, it was not dyed. The kitten was just edited in after effects.
TheQuickSpeed I did watch and if you look at the kitty he/she WAS dyed. Compare her in the beginning and during the filming, she has cheeks on and they dyed her fur a brighter orange. The effects added was to get this brighter color but the cat was dyed which is sad.
