I think I just understood why they soak up the oils a bit with the bread at the end. Not only is it flavorful and cooks the bread a little, completing the meal, it also removes some or all of the leftover oils used to cook the meal so they can put more fresh oil and/or butter and not worry to much about flavours mixing to much between each recipe. I could be wrong. This is just a guess based on observation.
Does this guy still cook? I ate at his store once when I was in the area visiting a classmate's relative. I had the omelette burger thing. Someone ordered it and I just pointed to the cook that I wanted the same. The way he prepares the dish was really awesome. Unlike the previous guy who ordered, he knew I was a foreigner and he put the spicy sauces on the side instead of putting in directly on the egg as be assembled the thing. I legitimately want to try egg handi ❤

This question was raised while shoot of this video, the owner responded by saying, people still want more Butter!
