- Quick quick Carrot Atchaar by @fehmz
In a bowl soak the following overnight:
Half piece of mebos, cut into pieces
Half cup hot water
3tblsp vinegar
Cover. Do not refrigerate
The next day:
1kg carrots, peel and cut into finger length pieces
In the bowl with the mebos, mix well so that it dissolves and becomes a paste
Add:
1/4 cup vinegar
2 tsp red chilli powder
3 tsp methi/atchaar masala (buy it from an Indian grocery store)
Mix well and add to carrots. Combine and have a taste for salt.
Add vagaar:
1/3 cup oil
Crushed garlic
Curry leaves
Mustard seeds (optional)
Add to carrot mixture. Enjoy!
Only lasts about a week in the fridge 😜
Eat in hot roti or between buttered bread 😍

Skat you never said how many pieces of mebos, i put 10 round pieces and chopped it up and soaked in hot water and vinegar. Is that too many

Can I make it without the merbos
You can but it won’t have that unique flavour. Even ground dried apricots would work.
